Positively Outspoken


So, when I put out there the question of what you like/dislike about SWYNTS from my GIVEAWAY post yesterday, I had no idea the outpouring of uplifting compliments I would receive.  I was on such a self assured high last night as I read all of your sweet compliments.  

The one common observation seemed to be that I like to speak my mind and I'm not afraid to do it.  At first, I wasn't sure if this was a good or bad thing.  I know I am a passionate person and I know I stand firm in my beliefs, but I never ever want to make it seem as though my thoughts and views are voiced in a sense of know-all or demand.  The one aspect of this blog that I can't stress enough is that I continue to write, do, eat and feel what I know is best for ME!!!!  If I am able to inspire or motivation others by my own experiences and lifestyle, than that is awesome, but I would never tell someone how to live their life just because it's the way I choose to live mine. I hope that is the tone I take on this blog.  If not, please let me know so I can tone it down.

Breakfast

A closer look….


I recently picked up this new bowl at Pier 1 for the sheer reason of being able to obtain better shots of my breakfast bowls.  With the clear glass, you can now see the insides of these creations.  Great investment if I do say.


I had quite the day of travel running from point a to z with no time in between.  Finally, I was able to stop for a break around lunch. 

I stopped at a small cafe to grab some lunch before my next appointment.

Roasted Corn and Crab Salad

This salad was delicious!  It contained fresh roasted corn that had to have been from a cob, lump crab meat and served on a bed of greens with roasted red peppers.  It was perfectly refreshing and filling at the same time.

I love busy days, but I was kind of happy to end this one.  I think a combination of the heat and stress has me feeling just a little run down these days.

Dinner


My friend recently bought me some home grown mushrooms she picked up at the farmers market this past weekend.  They looked beautiful!


I decided to incorporate them into tonight's dinner which was a fantastic "pasta" dish.

Creamy Zucchini Hummus Pasta with Broccoli, Sun Dried Tomatoes, Mushrooms, and Edamame 


I made the zucchini pasta by simply peeling an entire zucchini.  For the veggies, I sautéed them in a skillet and then added the zucchini to cook down just a bit.  For the sauce, I melted one LC Cheese wedge with about 1/4 C unsweetened almond milk, garlic and 2 T nutritional yeast.  Then I added 2 heaping T of garlic hummus.


This = amazing!!


Apparently this is not vegetarian though.  Someone just told me that Laughing Cow contains animal byproducts.  I'm not too much of a fanatic when it comes to that, (I will actually eat chicken broth and dairy products containing these things) because I choose to eat meatless for dietary reasons, but in case you were going to make my sandwich from last nightjust something to keep in mind if that's how you roll.
