More exciting news….
Tonight, I believe I may have created the most delicious and mind changing sandwich I've ever created.
Welcome, The Buffalo B.E.L.T.A
("Bacon" (tempeh), Grilled Buffalo Eggplant, Lettuce, Tomato, Avocado)
First, you need to make this tempeh bacon. This is key. I absolutely hate bacon but this is totally different.
Then, you grilled 3 eggplant slices and brush generously with buffalo sauce. You then layer two slices of whole wheat toast with buffalo hummus, LC blue cheese, and mashed avocado. Finish the thing with some tomato slices and lettuce and this is what you end up with...
Pure vegetarian BLT heaven.
I couldn't believe how good this was. I want it all over again.
