Strawberry Peach Wheatberry Salad

I tired it again today but this time, in my cereal bowl….

1/4 C Kashi Go Lean, 1/4 C Natures Path Multi-Bran Flakes, 1/4 C Tj's Twigs, Banana, Raspberries, 1 T Galaxy Granola, 1 T Sun Warrior Vanilla Protein Powder


I definitely enjoyed the powder in the cereal.  Honestly, this bowl kept me full for over 5 hours so I guess its working.

Many people remark that they can never feel full from a bowl of cereal and I think I would feel the same if it wasn't for some source of protein in my own bowls.  Whether it be nut butter, greek yogurt, or protein powder, it's key in keeping me balanced and satisfied until lunch.

For lunch, I had the chance to take out a good friend and co-worker of mine for her birthday (which is tomorrow).  I let her pick the place and to my delight, she chose Cafe Magnolia! (My favorite!)

I was planning a big salad for dinner so today, I went with my usual Veggie Wrap.

 Just look at that avocado!  This particular one had an impressive amount, probably 1/2 an avocado's worth.  Also included in the wrap was Black Bean Hummus (which is amazing), spinach and pico de galo.

I had my wrap with a side of their incredible fresh fruit.  I have no idea what make their fruit salad so good but it's better than you could imagine.


As promised, tonight's dinner was a big beautiful salad.

This salad came to me this morning and I worked on the recipe all day in my head.

Strawberry Peach Wheatberry Salad 

  • 1/2 C cooked wheatberries 
  • 1 diced peach
  • 1/2 C sliced strawberries
  • 2 T roasted pecans 
  • Handful of fresh basil 
  • 1 T honey
  • 1 T White Balsamic 
Combine all ingredient to combine. 

The end result was better than I imagined it would be.  I served this salad on a bed of spinach with grilled asparagus, eggplant and topped with goat cheese. 



Lately, I've been loving the idea of adding healthy grains into my salads such as wheatberries, quinoa, brown rice, etc.  I have trouble digesting large amounts of raw vegetables without some sort of  carb so having a nice balance of grains is an excellent way for me to enjoy these huge salads without the discomfort.


I recently found out some exciting news that I can't share quite yet but I will as soon as I find out more details.  All I do know is that its going to be one crazy but amazing summer!
