Our Favorite Meal

My breakfast bowl today was quite good. 

1/3 Cup (the last of the box) Yogi Walnut Spice, 1/4 Cup Nature's Path Multigrain Flakes, 2 TBL Love Grown Apple Walnut Granola, 1/2 pear, 1/2 Banana, Blueberries


I love the end of the cereal box.  It's where all the good crumbs, nuts, and spices lurk.

I was able to come home for lunch today which is something I always enjoy doing.

Lunch was a little later because I had some appointments but for some reason, I wasn't starving.  I put together a small salad with roasted broccoli and chi peas on spinach with cottage cheese, hummus and balsamic.


It's finally smoothie season.  I whipped up a mini smoothie of Pineapple, Frozen Mango, Spinach and chia with some OJ.


Grapes for something sweet.


Mmmm, fantastic. 

The day was so nice that we had to grill dinner tonight.  I picked up some Wild Caught Organic Salmon at Trader Joe's and remembered to take it out of the freezer last night so that it would be thawed for tonight. 

Grilled salmon is both one of me and Toly's favorite meals.  Every time I make it, we usually don't talk much at dinner because we're too focused on licking our plates clean. 

It doesn't hurt that my grilled salmon recipe is the jam! 


I served my piece of salmon in the salad form which is probably my favorite way of eating it.  I put together a salad with strawberries, cucumber, avocado, edamame, feta, and grilled asparagus. Once the salmon was on top, I drizzled the salad with a balsamic glaze. 


How could something this beautiful not be fantastic?  

Oh and it was! 

I'm trying to get pumped for the weekend but I'm realizing that I still have a lot to do.  I think its going to be one of those weekends that is entirely fulfilling and wonderful but also quite busy that it doesn't really feel like a weekend.  No worries, it's still going to be great!
