A Busy Goodbye to February



Hey there! 

Wow, today was a long one, but I'm thankful that this Monday is over.  Tomorrow starts a new month and a new fabulous month for me in particular!  We are DEFINITELY moving next month (hopefully within the next week) so I'm already looking forward to kissing February goodbye and welcoming Spring in my brand new home!!! 

I started my marathon day with a refreshing bowl of fruit…..

Pineapple, Kiwi, Blueberries and Blackberries with Pineapple Chobani and Chia Seeds

1/2 Ezikle English Muffin with PB and Mashed Banana and Plain Jane Granola 


I picked up the fruit yesterday from whole foods and I have to say, I was slightly impressed with the prices.  It wasn't nearly as bad as I thought it was going to be for fresh organic overpriced berries. 

I was out of the office on Friday working at a school, so today was all about getting caught up with reports, emails and voicemails.  Around noon, I broke into my pre-packed lunch knowing I had a 1pm meeting. 

Kale Salad with Roasted Beets and Chic Peas in Balsamic and Agave 

I'm not sure what makes massaged kale so good but it's like a whole different salad to me.  I think I actually prefer kale over any other green these days.  I've been trying to balance out my lunches with carbs because it seems to work well when I consume a lot of veggies.  I don't digest veggies as well as I'd like and adding a whole grain seems to help that process.  I ate the other 1/2 of my Ezikle muffin with some hummus and carrots on the side.


I ended up shoveling this in before my meeting and ate a bunch of grapes in the afternoon to get me through.

The gym was packed today!  I don't remember the last time I saw that many people there at one time.  Oh wait, January 1st!!  My gym is running a special that goes until the end of the month, so maybe people decided to take advantage of it today?

Regardless, my treadmill was open and I enjoyed a nice 5 mile run while catching up on everything I missed from the Oscars last night with some ET.
**SIDENOTE*** So happy Natalie Portman won Best Actress!  And how AMAZING did Reese Witherspoon look?  She is my fashion role model!

I spent the commute home on work phone calls that lasted well into dinner making time.  Fortunately, I had a dinner plan and it didn't involve too much prep work.

Pizzas are always so delicious and pretty quick to make.

We purchased some whole grain focaccia while at WF's yesterday so I split the loaf in half and did personalized pizzas for each of us.

Toly had Chicken Bacon Tomato Mozzarella and Feta 

Mine was Pesto Roasted Vegetable with Sun Dried Tomatoes and Goat Cheese

This pizza definitely delivered!

I made a simple salad on the side and enjoyed two slices.

Tomorrow should be a bit more calm.  And sunny!  Thank goodness for that. :) 

What are you looking forward to most in March? We all the answer to that for me…..I GET MY HOUSE!!!!!!

  2. I still haven't tried massaged kale - I HAVE to get on this!! Glad to hear you're moving so soon- that is super exciting. Are you guys starting to pack away what you have at your parents house already? Dinner looks incredible. I miss goat cheese :( I need to find an ultra pasteurized preggers friendly version ;). I'm most looking forward to finding out the sex of our baby!!

  3. YAY!!!! I can't wait until you move into your new house - you must be so so excited! I'm the same way with veggie overload - I have to pair it up with a carb or some sort (potato or bread) or else I have a horrible stomachache.

  6. Yum!! We had pizza tonight as well, it always seems to hit the spot.
    March ... my parents are coming to KC in a couple weeks to visit us [maybe I should tell them to sneak my nephew away to come and visit me too] and it's my birthday month :]
