Spontaneous Saturday


I don't usually sleep in. 

I had every intention of waking up and hitting an early morning spin class at the gym yesterday, but when I rolled over and saw that I had slept in past the start time, I knew Spin would have to wait until next week. 

I NEVER sleep in so 8am was definitely a new record for me.  The funny thing was, I fell asleep at 7:30 the night before.  I guess I was way more exhausted than I realized.  

I pulled myself out of bed and decided to just play the morning by ear.  I'm not sure why I always think I need to be on a set schedule, even on the weekends.  We really had nothing planned until later, so why did it matter?  It didn't. 

I leisurely read emails until I started to get hungry. 

 Banana Oats, Frozen Berries, Vanilla Chobani, Granola 

I had a quite a perplexing situation with the granola this morning.  When I went to go for my usual sprinkle, I noticed that there was only the crumbs left in the bottom of the bag (my favorite!).  There really wouldn't have been enough to use for another time, so I figured, let's just throw it all in there.  That is why you see all granola in this bowl and no oats.  I swear they were buried underneath that. Today, I just may have had more granola than oats and you know what, it tasted delicious! 

I made it to the gym late morning and spent 5 miles on the treadmill.  My whole body felt tight and sore and just not into it.  I'm guessing The Insanity workouts have caught up with me.  

I was going to call it a day, but I realized that Body Flow had started and I thought I could sneak in for a few downward dogs and camel poses.  

So glad I stayed!!!  This class is always what I need after a week of intense workouts.  

Once home and showered, I wasn't really hungry for lunch quite yet, but I was hungry for a cookie craving I've had for some time. 

I've been wanting to make Supercharge Me Cookies for so long, but my Eat Drink and Be Vegan cookbook was packed away.  I was so happy to find the recipe online. 

 These cookies are awesome and a fantastic pre/post workout snack.  Just take a look at the ingredients and then if you have not already, go make them!

After eating a cookie, my appetite sparked for lunch.

 Mixed Greens, Cucumber, Carrots, Chic Peas, Peas, Broccoli, Tomatoes, Mandrin Oranges, Sesame Tofu, Hummus, Sesame Vinaigrette

I am able to make the most filling salads.  This beast kept me satisfied for hours. 

Toly and I had some errands to run and then decided to go see a movie.  No Strings Attached was very cute.  I love Ashton Kutcher and Natalie Portman and even though the plot line is definitely predictable, it's still a cute movie. 

Once the movie let out, we headed downtown to meet our friends for dinner. 

Audi and Mark have been wanting to try El Sol and since she hears me rave about its amazing Mexican food, we finally decided to make a double date there. 

 Margaritas are a must


I finally was able to order the Lobster Enchiladas.  Every time I have been there, they have run out of this item.  I think because its the most popular dinner entree and no wonder!


Huge pieces of juicy lobster meat, spinach, portobello mushrooms, wrapped in chewy warm tortillas covered in spicy sauce.  Heaven on a plate. 

It was a great night, good food, and good company.  

Today, I have no idea what's on board.  I could get use to these spontaneous weekends. :)

  1. I wish I could have slept in this weekend - I was up at 5:30 each morning. I have not been sleeping well at all!

    I need to get on the super charge me cookie bandwagon - they look great!

  3. How funny that your baked the super charge cookies! I planned on making some tonight! How are you liking insanity so far? It can definitely be exhausting after doing it consistenty for a while! I am the same way, even on the weekends I still wake up and feel the need to have a game plan for the day. I've been working on being more spontaneous! lol Enjoy your Sunday!

  4. I am the same way! I seem to always want to follow a schedule- sometimes its nice to just go with the flow! I need to make those supercharge me cookies. I always see them everywhere and they look so delicious. And Lobster Enchiladas? mmmm. Enjoy your Sunday ;)

  6. Super Charge Me cookies are seriously my FAVORITE thing to make. They're so delicious!! I've never tried using coconut oil in mine, but that sounds like a tasty sub.

  7. I rarely EVER sleep in...not to say I don't try, but I'm always up no later than 7:30am (even if I go to bed extremely late). For some reason, I feel like I have to have a schedule on the weekend too. I guess it's just hard for me to let go of streamlining things during the workweek.

    Those lobster enchiladas sound ridiculously good! Wow! Hope you have a great rest of the weekend!
