Vegas Vacation


BIG smile today!! 


I was thrilled to start my day, just so that I could get closer to the end.  Why you ask?  Well, in case you missed it, tomorrow, we are leaving for Vegas for the week.  Yes VEGAS!  I really can't explain how excited I am.  It will be my first time in Sin City, but Toly has been a few times and the friends we are going with are true Vegas veterans.  I foresee hot days by the pool, some epic shopping and eating, and parties all night (or in my case at least until 10:00pm!) 

Well, as excited as I was, I still needed to get through this Friday. 

I was going to go for waffle Friday, but last minute, I decided to save it for tomorrow so that I can make them for Toly as well.  I left him a note that said "if you make eggs today and use up the last of the bread, I'll put together some "Lauren-style" waffles tomorrow."  He texted me later and said "I'll never pass up anything "Lauren-style."  

I put together a fruit/yogurt/cereal bowl. 


1/4 Cup Raisin Bran, 1/4 Cup Shredded Oat Squares, 1/2 nectarine, 1/2 banana, Blueberries, PB Granola, Blueberry Chobani 




I am LOVING this Nature's Path PB Granola.  What I love most is the actual peanuts found throughout. 


In my attempts to eat down the fridge, I shoveled in the last of the fruit too.  We DON'T waste organic fruit here! 

I was so very busy at work today that I think I woofed down lunch in 5 min flat.  Pretty amazing for me, because I'm one of the slowest eaters known to man.  I realized after it was in my tummy that I forgot to picture it. 

But, I'll just show you a replica from last night, because it looked just like this….

Slice of leftover Grilled Veggie and Crab Pizza with some zucchini sticks and hummus and watermelon 

Do you ever notice how crazy work is the day before you leave for vacation?  Never fails, something ALWAYS comes up the last 15 minutes you try to leave.  As hard as I tried to keep my day as low-ley, organized, and planned as possible, I was still running like a crazy person when I had to leave. 

I still managed to get out on time and make it to my appointments. 

Very important appointments mind you! 

Mani, Pedi, and hair cut. All very needed before the trip.

After my errands, it was getting late and with little food in the house and little energy to cook, I ran into my favorite Japanese restaurant for some take-out sushi. 

I ordered a favorite, The Angel Hair Roll. 



Scallops, Avocado, Cucumber with Spicy Crab baked on top 


These rolls are huge, and somehow I managed to polish off all but two pieces.  So delicious too! 

With my sushi, I made a big salad with just about every leftover veggie I had. 



Romaine, Cabbage, Radish, Roasted Butternut, Broccoli, Asparagus, Cranberries and Peanuts in a Peanut Mango dressing (homemade) 


Definitely wished I had wine with this dinner, but I did not want to open a bottle because I would have felt compelled to finish the entire thing keeping my "clean out the fridge" philosophy. 

No worries, plenty of wine will be had in Vegas! ;) 

Well, I still have yet to pack, so I must get to that.  We leave tomorrow afternoon so hopefully, I can get in a nice run in the morning and not feel rushed.

  8. ahhhh i have NEVER seen a roll like that before! i love it - crab baked on top? yes, please! i don't even love seafood that much, but it sounds amazing.

    yay for vacay! once you get to vegas, all the craziness of the present will be forgotten. safe travels :)
