Nothing Special


Thank you all for your sweet wishes on our anniversary yesterday.  It was truly a wonderful day and Toly and I were so grateful for every single one of them. 

Today was nothing special, but simply splendid none the less. 

I'm very happy to say that my run this morning was pain free.  I swear by the foam roller people.  After a 10 min roll last night, my knee felt absolutely fine today.  

Breakfast began with a ripe pear and ended with this….

1/4 Cup Kashi Go Lean Crunch, 1/4 Cup Kashi Harvest Wheat, 1 small pear diced, 1/4 Cup Applesauce, a few spoonfuls of Greek Yogurt, Blackberries, 1 tsp Cinnamon PB


I'm not really sure why some Ruby Grapefruits are so pungently red and others are not so much, but this one was gorgeous! 

I finished up this delightful breakfast, put on my new dress and was off to start the work day. 


I would like to take back my previous statement of today not being very special because I forgot about a special event that I held over lunch.  Today, the students that went through my college scholarship program completed their experience and I threw a big celebration award luncheon.  We held the lunch at Cornerstone Coffee House, where my good friend and owner, Sue provided the most wonderful catered spread.  She even had a special Veggie Wrap made just for me! 


It was a spectacular luncheon and seeing Sue always makes my day.  Every time I visit, she never lets me leave without giving me a special treat to take with me.


This was their "Sports Nutrition Bar" which was chock full of good stuff. Kasha, Cranberries, Peanut Butter and so much more.  I immediately nibbled on the end when I got in my car.

And because Toly is never left out, she even gave him a few little treats to sample.


After work, I decided to make a date with a someone whom I have put on the back burner for awhile.  Ms. Jillian Michaels! 30 Day Shred is back! I'm thinking of doing the shreds again but probably only twice a week.  I really do love this workout and it's a great way to incorporate strength, cardio, and abs all in 20 min.

After Jillian reminded me how much I hate love her, Toly and I took the pups for a walk and then got started on dinner.

Tonight, I made a Spicy Organe Tofu Stir Fry

Frist, I prepared the tofu and marinated it in a spicy orange sauce (store bought).  Then I sauteed a frozen veggie mix of green beans, edamame, and carrot stick with ginger and garlic.  I added fresh broccoli, pepper and mushrooms and a little more sauce.


To go with the stir fry, we had brown rice.

Well, I had brown rice.  Toly had fried rice with orange chicken.


He deemed this one of the best stir fries I have ever made.  I agree, it was quite good! 




Oh but one more reason why today is special, Chase Utley has returned from the DL!  The Phillies are whole again (well minus Howard but hopefully he will be back soon). 

Off to see my man in action! :)

  5. I know you didn't have a salad today but I was wondering if you could do a post on how you decide on what goes into your salad! They always look so yummy and appetizing :) I tend to shy away from salads because they never satisfy me so I'm hoping you have some tips!

  6. Yay! I am happy that Chase Utley is back too! I am going to the Phillies game on Saturday and I am excited to see him play! I actually have the same exact dishes as you!! I was obssessed with them as soon as I saw them at Target! I love the design and the square shape. :)

  7. I didn't even know Utley was gone! (Shows how much I follow sports). That lunch looks so yummy, especially that bar!! I love how colorful and full of different ingredients your meals are. You really do eat the rainbow!!

  11. Happy belated anniversary my love! I love your outfit too--keep posting outfit pictures :D That's so awesome that you had that award luncheon. It's definitely a great reason to celebrate. And your friend Sue sounds like such a loving person! How thoughtful of her to send treats for Toly as well :D Whenever I hear about kasha I think of you! I have yet to try it, but that bar sounds sooo good. And you know what else sounds good? YOUR STIR-FRY! I didn't even try it, but I'm going to just say that I agree with Toly lol. It sounds like the best stir-fry!
