The Start of The Season



It's the first day of May!!!  A beautiful month and one of my favorites.  To me, spring peaks during the month of May and I begin to anticipate the start of so many wonderful things, like gardening, farmers markets, and produce season prime! 

All of these things that I love were enjoyed this morning. 

Oatmeal = love!  Even though I enjoy this year around, there is just something about starting off a beautiful day of a new month with a glorious bowl of oatmeal. 

I decided to try Scottish-Stle Oats after seeing Ashley review her new love on the texture.  To balance off the nutty thick texture from the Scottish, I blended a bit of the creamy multi grain into the mix. 

 

  • 1/4 Cup Scottish Oats
  • 2 TBL Multi Grain Cereal 
  • 1/2 Cup Water (the scottish oats require a bit more liquid)
  • 1/4 Cup Almond Milk 
  • 1/2 ripe banana
  • Chia and Flax (1 tsp. each) 
Mixed in
  • 1/4 Cup Canned Pumpkin
  • Cinnamon

Pumpkin will always remain my favorite oatmeal mix in.  Despite it being a seasonal item.  Loved the texture of this batch.  

Topped with White Chocolate PB, Pecans, Blackberries and crumbled ginger snap.






Delightful, delicious and decadent!


Shortly after breakfast, my dad picked me up for some shopping.  Farmer's Market and Gardening Shopping of course….are favorite kind.

We spent last night prepping the garden and this morning buying the veggies to plant.


The pro was there to guide me through the experience.


I did pretty well.  Got the basics and then some.  

We even made our own flower baskets which was way more fun than buying a pre-made one.  (And a ton cheaper!)


When I got home, I got straight to work…..

And was very proud of the end results….

All that work really worked up an appetite.  I put together a wonderful salad with the leftovers from last night. 

Spinach, Tomatoes, Broccoli, Mango Avocado Salsa, Grilled veggies (from last night) Pumpkin Black Bean burger (from the back of the freezer) Peach Salsa and Greek Yogurt



My side bowl of fruits and veggies, pineapple and carrots.  Wonderful lunch and very filling. 

Tonight, we are headed to Philly for Toly's grandma's birthday!  It's going to be a late night so I better get my rest now.

  1. What a fabulous day you've had so far! Your oat bowls always look amazing and the garden is SUPER cute. I know I tell you this every time you talk about your dad but I just LOVE your relationship with him- ya'll seem so tight ;). Have fun at dinner with Toly's gma
