The Best Grilled Cheese Sandwich I Ever Ate


Happy Hump Day my friends!

How are things going for you this week?  For me, life is bueno!  Aside from the norm of the tummy woes, but I digress.

I was very happy to be teaching today instead of another full day in the office.  That is what I love about my job.  I get the best of both worlds- the corporate atmosphere and the classroom.  It's perfect for me!

After reading Kath's  post yesterday on junior high trends, I thought I should join the conformity and roll with the style of the week, which apparently was curled hair.



I haven't curled my hair in ages, mainly because it takes more time in the mornings and I would rather devote that time to eating and blog reading; however, it was a nice change and I felt pretty.

I guess I should consider taking more time to make myself look pretty tomorrow though.  Tomorrow, is a HUGE day for me, as we are having a Grand Opening Celebration at one of the most well sought out school's in our area.  Not only will all of our executive management and CEO be there, but the directors of the school district, the press, and the governor!  AND!!!  I just found out that I will be interviewed for a piece that the local newspaper is writing on me.  Apparently, the reporter was so impressed with my success story of working with the company and where I am today and wants to do an entire article on me!  Holy crap!!!!

Another reason I had time to primp today was because I knew breakfast wouldn't take more than a few minutes to throw together.

You've seen this before, since it makes a weekly appearance in my morning eats but I just can't tell you how much I enjoy it.

After teaching all morning, I worked up quite the appetite for lunch.

I had a new product to try that I wasn't too sure about but I kept an open mind.



I LOVE Amy's Burrito's and Pockets, so when a "wanna-be" burrito enters the scene, I am afraid my biased opinion will overrule.  But this was on sale and was gluten and dairy free. ( I have been trying to eat only gluten free and dairy free products for lunch because I don't want to risk a stomach attack at work.)

Just to be safe, I kept Mr. Newman close by.  He always does me right.  Plus I think this is the best salsa in the entire world!

Tofu and Veggie Burrito with Pineapple Salsa and Greek Yogurt, A handful of foodshouldtastegood jalapeno chips, orange slices and grapes


So turns out the burrito was a hit!  Not sure if I would choose this over Amy's, but for $1, I would totally buy it again.  It was spicy and had a nice smoky aftertaste.  I also loved the chunks of tofu throughout.  Winner winner burrito dinner! (or lunch in my case)

Okay, now I have to tell you guys something.

Tonight, I had the BEST grilled cheese sandwich I ever ate.

I think you need to brace yourselves for this one….

Sweet Cinnamon Grilled Pear Goat Cheese Spinach Sammie with Mango Chutney and Dijon



That was a mouthful, but then so was this sammie!

The assembly required one slice of TJ's Whole Wheat Tuscan bread, 1 LC Garlic and herb wedge, 1 TBL Dijon, Handful of wilted spinach, pear slices grilled with cinnamon and agave, goat cheese and mango chutney.

I will never eat another grilled cheese unlike this so help me God.  Calling it good would be offensive.  This one deserves an entire section of the food pyramid.  WOW!

My BF Jen and I decided on our race this year…..

We will be running in the ING 1/2 Marathon in Hartford Connecticut on 10/9/10!

I am so pumped!  :)

  2. WOW! Congrats on the article! How freaking cool is that. I love the curled hair- I'd totally do that again tomorrow if I were you! Glad the burrito was yummy. Love Newman's Own Salsa- nom nom. The race sounds great- can't wait to hear more details about it. Week has been pretty good over here. I had to travel for work so that is kind of mehhh but I get to go home tomorrow night!!

  11. a burrito for a buck? can't beat that! your title got me really excited because i LOVE grilled cheese sandwiches! they are one of my favorite foods. and WOW you werent kidding. that GC is GOURMET! yum! haha~ its own section on the pyramid. i like that. congrats on the race decision! love you lots!

  16. WOW!!!! That grilled cheese sandwich sounds more than amazing. My favorite grilled cheese sandwich is pretty simple but it also includes mango chutney--holy yum. I'm so excited for you and all these doors that are opening for you. So awesome that you are being recognized because you are in fact an incredible person. I can't wait till we finally meet :D
