A BFD Today Keeps The Doctor Away

Due to the unfortunate state of health in our home, I made the executive decision to move our weekly BFD meal to this evening.

Because we all know, that BFD is a sure fire way to beat any illness.

Despite my crummy state of wellness, my appetite was off the wall this afternoon. I was starving! Guess my metabolism finally caught up with me....

All I was craving was some warm, gooey, egg sammies for dinner.

And some delicious home fries.

I know I have said this before, but home fries is Toly's FAVORITE thing in the world. Really, just ask him what his favorite food on earth is and he will tell you....home fries!

Now, I know the process of making this breakfast side dish may seem like a real task, but I have found the very best method for making them healthy, fast and INCREDIBLY DELICIOUS!

First, I peel one potato and slice into cubes. Then I heat a pan and spray the bottom with a little cooking spray. I take the peeled tater cubes and microwave them for about a min or two until they get just slightly soft. Then I throw them in the hot pan, add some EVOO, salt, pepper, and paprika, and let them sit until the brown and get extra crispy on each side.



Now the problem here when making most home fries, is that the potatoes will burn before they are done cooking mainly because the pan is too hot and the length of time it takes to get a potato to the doneness it deserves in a skillet is quite lengthy. So, here is the trick folks....

Immediately after the potatoes are browned and form that great crispy crust, throw the entire skillet in a 350* oven for about 15-20 min. Cover it with foil so they don't burn and the potatoes will finish baking in the oven!

Brilliant!


Since I am not a fan of white spuds, I did my favorite version of this side dish.

Butternut Squash and Red Onion Home Fries (using the same cooking method but also adding 2 big handfuls of spinach near the end)

The egg sammies were a repeat of ones I made a few weeks ago. Egg whites mixed with dijon and pesto, spinach, goat cheese and pumpkin butter on cinnamon raisin bread.

This is TO DIE FOR! Every single flavor in this sammie is way too good for words. It's a total flavor explosion!


Toly had his usual, egg, bacon and cheese....


A BFD Day is what will keep the Doctor away!




Okay, I'm praying that I can get some better sleep tonight. In a few minutes, I'll be popping some Tylenol PM so you may not see me for a few days. Haha, drugs and me don't mix so well, but I'm desperate for a good nights rest so I will do just about anything! :)

  6. Oh no!! Feel better!! I hope BFD works its magic. Whatever feels good to the soul, usually is good for the body as well :D Yes, hopefully you get some rest. That's the best thing for getting better. I bet it's from the wacky weather when the season's change.

  7. Hope your household gets better soon! Love your method. I always microwave potatoes for a while before utilizing any other cooking method (did it with my griller fries this weekend. The BFD looks amazing.
