I had a dentist appointment this afternoon and no cavities for me; however, I did receive the unfortunate news that my wisdom teeth must come out ASAP! Bummer, I knew that they were there and I would need to do this for awhile, but have put it off for some time. Oh well, better to get it over with now than later.
The rest of the day was a little rushed. When I got back from my appointment, I only had a few minutes to chow down my lunch and then enter back to back meetings for the rest of the day. I knew I was going to be pressed for lunch today, so I wanted to be sure I had something quick but filling. I grabbed this little baby from the freezer last night. As I’ve said before, I’m not the biggest fan of frozen meals, but sometimes, they are necessary. I’m also very hesitate to try new ones but I felt confident with this one because I think I have yet to try a Amy’s product that I dislike and I’ve seen it reviewed on some other blogs before and being a favorite. This pocket was filled with gooey spinach and feta and the crust was quite flakey and sweet. It was made with organic ingredients, all natural and had pretty impressive nutritional stats. But most importantly, it tasted incredible! Seriously guys, if you ever are in the mood for a fantastic “hot-pocket” give this one a try. Delicious!
I am so happy I had a leftover cup of Amy’s Organic Chunky Tomato soup to dip my pocket into. It was the perfect pairing.
Okay now I must rave about dinner tonight. I have been thinking up this recipe in my head for weeks and have been dying to put it all together. The initial inspiration came when I picked up a new flavor of Food Should Taste Good tortilla chips, Buffalo .
One of Toly’s FAVORITE things that I have ever made is buffalo chicken dip and we both love anything buffalo style (seriously, who doesn’t?!?!) So, I thought, tortilla chips + dip = NACHOS! I basically just took the base of the buffalo chicken dip and then went from there, constructing all the ingredients that I could pile together to create the most unbelievable nachos. Here is what I came up with…
Lauren’s Buffalo Chicken Nachos
For the dip-
1 can of shredded chicken (you could use the real thing but I had this)
2 TBL. Of Ken’s Buffalo Sauce
1 TBL of cream cheese
1 TBL of plain yogurt
Parsley, S&P, Garlic Pepper
Mix all together and heat in the microwave for 2 minutes.
For the Nachos-
In order, starting at the bottom layer and working your way up:

Food Should Taste Good Buffalo tortilla chips
Spinach
Buffalo chicken dip
Black beans
Sweet Potatoes (peeled, diced and nuked)
Chopped Tomato
Feta
***At this point, you will want to put your bowl in the oven at 400* for about 5 min, so that everything heats together and the cheese melts
Banana Peppers
Jalapeno peppers
Avocado
Black Olives
WOW, these deserve a huge OMG! If you love the idea of gooey, cheesy, spicy, delicious nachos but are scared to death to eat them, I promise these will be your saving grace. I know I have said this before, but I promise you all, eating healthy does NOT mean sacrificing on some of the classic bar type fare. You can modify just about anything and eat it entirely without any guilt.
Trust me, being nutritious does not mean being stupid and it would be stupid to cut out the things in life that make you happy, such as pizza, cheese steaks, burgers, fries and even nachos. Just take some time and learn to make them yourself. So worth it, I promise!

PS- Did anyone catch American Idol last night? I am happy that Danny didn't go home, but I was almost in tears when Allison belted out her last song. It gave me chills! She is truly amazing; so sad to see her go. :(

Yayyy for no cavaties! I hate going to the dentist. Those nachos look AWESOME! I was actually thinking about making nachos sometime this weekend- it has been way too long since I last had some. Josh loves buffalo sauce so maybe I'll give your version a shot!

Mmm buffalo nachos - INSANE!! I must make ASAP! I don't like to eat frozen meals either - but I definitely make an exception for Amy's. I've never had a bad one - love them!
