I was able to get my baby fix today. After work, the rain let up so Toly and I walked over to Jen and Brian’s house to pay our good friends a visit. Toly has not had the chance to meet Emily and has been so anxious to see her. Also, we needed to give Connor his birthday present, since he turned 2 last weekend.
Emily was just pure perfection. Even more beautiful then the first day I saw her!
Connor wanted to test out the durability of his new gifts by running his trucks over them.
We visited for a few minutes and then decided the clouds looks pretty threatening and we should probably start to head home. As we began our walk, a few drops fell and the clouds got greyer. We ended up running the last 1/2 mile home and literally made it home just before the dour pour.
Now that's timing!
Dinner tonight was made quickly because we were starvin' by the time we got home. Originally, I was expecting to be dining solo tonight. Toly had plans to go out with some friends from high school to celebrate his one friend being home from Iraq ; however, it got cancelled, so I had to come up with a new dinner plan. I tend to take the opportunities when I am alone to create very unique meals that Toly would never consider. Oh well, I am sure he was happy he didn’t miss his chance for BFD night, being that it is Wednesday.
I still managed to make what I was planning, only made him a modified version. For some reason, I’ve seen poached eggs appear quite frequently in the past few weeks, and ever since, I have been intrigued to try this. See, I am not a big egg fan in general. I like egg white scrambles but with little egg and I can only enjoy a real egg about once a month. It’s odd but every so often, on a rare occasion, I get a random craving for a real egg. So I guess it was the fascination of the poached egg that brought about this desire, but I have never attempted the poaching process and knew that it had to be done sooner or later. I printed out directions and followed them to a T.
Turned out quite decent. The thing I like the most about this cooking process, is that you can control the consistency of the egg. I am extremely particular about the amount of yoke in my egg. It honestly has to be just firm enough not to be runny but not to be chewy. Guess this is why I don’t make eggs too often.
The construction of the eggs was the very best part of this meal. First went a down an eggplant cutlet (love these sooooo much!), then some roasted asparagus, spinach, sprinkle of goat cheese, and the egg topper. Salt, Pepper and Rosemary were dusted on top.
I felt this was similar to an eggs benedict fare, so I wanted to create a similar hollandaise sauce for dipping. Dijon and Fage were mixed together in order to obtain this.
Toly’s egg mountain consisted of toasted garlic ciabiatta bread, a slice of cheese on each side, and then the egg topper.
I also made some roasted kale for me and some fries for the boy.
Okay, the turn out….YUM! My egg craving has been satisfied for another month or two, but I really think the best component was the addition of the eggplant. Egg and eggplant should be paired together more often, they do share the same name and all!

Oh and I tried my foam roller finally. This thing is a true God send. It really does do everything it claims. You were all right, hurts like a mother at first, but feels oh so wondeful afterwards.

ReplyDeleteMiss Emily is looking pretty crazy... but pretty happy that she is getting to see her Aunt Lauren and Uncle Toly :) She'll grow out of that crazy-eyed look soon! :) haha.

Thank goodness Danny did not go home! I think he should win! In my opinion, he has the best voice! Cute baby! I've heard so many good things about the foam rollers!

ReplyDeleteAnd the foam roller is amazing. So far I have used it twice and alreday feel an incredible differece in my muscles. So worth the $20!
