A Day Behind and Toly's Favorite Food

I woke up this morning having myself convinced that it was Wednesday. When I turned on the news and they proclaimed that it was actually Thursday, it made my entire day! I love being behind a day in the week because it means that I am only one day closer to the weekend.


I am going to make this post short and sweet because Grey's is coming on soon and I don't want to miss a minute. (It's getting so good!) Truthfully, I wasn't even going to post this recipe; however, Toly insisted because it included probably his utmost favorite food....homefries.

Tonight was BFD (postponed from last night). I went a bit of a different route by making Monte Cristos and homefries. I've never attempted these sammies, but knew that based on the ingredients, they had to be a hit for the both of us. (With the proper modifications to satisfy our different taste)

This idea came to me last week but after I saw a similar recipe on Lauren's blog ( http://foodforliving.wordpress.com/) my sandwich took on a whole new level than just turkey and cheese.
My Monte Cristo.....
2 slices of ww cin. rasin bread
smear of pumpkin butter on one slice
sliced pear ontop of the PB
smear of dijon on other slice
baby spinach on top of the dijon
a few slices of honey smoked turkey in the middle

I brushed on the coating (milk, vanilla, cin., egg) and threw it on my griddle.

Toly's Monte Cristo....
3 slices of bacon
Lots of Ham and Turkey
Swiss cheese
and dunked a few times in the coating

These were very yummy! I love the mixture of sweet and savory and the pumpkin butter and dijon went surprisingly well together.

And for our side, I made Toly's most adored food, homefries. I diced up 2 small potatoes and threw them in a hot skillet with some EVOO. I sprinkled his with salt, pepper and paprika and let them brown. After they were completely browned and soft, I added a little butter and some parm and threw them in the oven to finish cooking.
He was in love!

My homefries were a bit different. I diced 1/2 of a sweet potato and 1/2 of a small acorn squash. I then sauteed with a little diced red onion and sprinkle of salt, pepper, paprika, chili powder and parsley. Using the same cooking method, these came out beautifully, especially with a big old handful of spinach thrown in at the end.

Tomorrow is the 1st Day of Spring and that means FREE ITALIAN ICE at Ritas. Don't forget to stop by and pick up your free Medium ice! :) What could be better, it's sweet, it's delicious, and it's free!

  1. Haha... we are obviously on the same wavelength what with tofu wraps for lunch and breakfast for dinner :) Your monte cristo sandwich sounds insanely good! I love the idea of coating it before pressing - I'll have to give that a try.

    Grey's just ended - great episode! I've been hooked since the series started.

    I miss Rita's water ice - I'll have to get one when I'm in PA in a couple of weeks.

    Don't you love being a day off like that?? I sure do! (Though unfortunately yesterday I was a day off and kept thinking it was Friday! haha, but since it's actually Friday now, I don't mind so much ; )
