Big Bowl of "Spaghetti"

Hello to you all!

Hoping everyone had a fantastic weekend. We spent the entire weekend at home! It was actually quite nice and seeing as this would be our last opportunity to hibernate for awhile, we decided it was probably best to take it. April is going to be a crazy month for us and it looks like almost every weekend is already filled with plans and events.

Today is nothing less than an ordinary Monday. I’m always so happy to get Monday’s over with and feel that once it’s over, the rest of the week can just ease on by. I have a few things going on this week, which should break it up a bit and then we are going to Baltimore for the weekend with Toly’s sister and brother-in-law.

I’ve been craving comfort food lately, so my sudden urge to make a big bowl of “spaghetti” didn’t surprise me tonight. I say “spaghetti” because I rarely use pasta when I actually make spaghetti. It’s not that I don’t like it; I just highly prefer the taste of spaghetti squash so much more!!! Pasta just seems to bland for me where as the squash has so much nutty wonderful flavor that I adore!
I decided to use up some leftover tofu/chicken that I marinated in a roasted rep pepper dressing for a few hours. Then I pan-seared the tofu/chicken and placed it in the oven to finish cooking while I made the rest of the sauce. The sauce was a combo of sautéed veggies (eggplant, zucchini, yellow squash, mushrooms) mixed with spinach, diced tomatoes, capers, and olives. I added the cooked tofu to the sauce and let all the flavors come together in the pan. I put everything in a big bowl on top of my “spaghetti” and sprinkled some feta on top. This is the kind of meal that sticks to your bones!

We had some bread and wine to round out this Italian delight. It’s just inconceivable to eat al’ Italiano without a nice crusty piece of bread and some fresh wine to wash it all down.

Now I’m full and content and ready to unwind for the night. Before I go, I wanted to share a few things tips of enlightenment that I have discovered last week.

1. Hummus + Salsa = a heavenly combination! (Thanks Kelsey!)
2. A baseball draft is a serious event. One that requires FULL concentration and absolutely
no sound that would interrupt the thought process. (The TV even went off. I thought
something was wrong.)
3. The skin of a kiwi fruit is entirely edible and surprisingly delicious!
4. Doing 10 min of yoga in the morning feels incredible!
5. Watching 6 back-to-back episodes of “The City” is one guilty pleasure that is most-
definitely justifiable every now and then.

  1. For some reason, I haven't gotten around to preparing spaghetti squash - but I've enjoyed it out at restaurants. It's high time I purchased one!

    John is all into the fantasy baseball drafts also... boys will be boys ;)
