Blown Away

The weather man this morning warned that today would be exceptionally blustery with wind gusts reaching over 50 mph. The wind actually woke me up with its loud bursts and howls. We actually had to brace Sammy with a small pep talk before he faced the forces by warning him of the powerful elements. This dog is not one for walking in the rain, snow, cold or wind (he actually tries to walk on one paw when it snows, to avoid having all of his paws get wet) so 50 mph winds plus a 10 pound Chihuahua don’t seem to make a safe combination.
Needless to say, he survived and so did everyone else.

After work, Toly and I went to the gym. I felt good tonight and well-rested so I was able to do an easy 4 miles plus some weight lifting. Dinner is a slightly new recipe that I of course tweaked to our liking. It’s based on an Apricot-Almond Chicken recipe; however, I subbed tilapia for the chicken. It was very simple to prepare and tasted great. The combo of sweet and savory (one of my favorite combinations) was excellent and the almonds gave it the perfect crunch. Here is how I made this one...

Apricot-Almond Tilapia

  • 2 Tilapia Fillet
  • 2 Tbl. Apricot Preserves
  • 1 Tbl. Soy sauce
  • 1 Tbl. cider vinegar
  • 1 Tbl. dijon mustard
  • 1 teasp. minced garlic
  • slivered almonds

Combine all ingreidents (expect almonds) in a bowl and microwave for 30 sec. to combine. Salt and pepper the fish and place in a pan. Pour mixture over fish and sprinkle with almonds. Baked at 350* for 15-20min.




We also had some rice and roasted veggies.

Tomorrow I will be getting things ready for Toly's Valentine's day dinner. We have decided that this year, we are each going to make each other a romantic dinner to celebrate the holiday of love. I'm very excited to see what he will be making and very much looking forward to night off from the kitchen. He also says there may be a few other little surprises, so I wonder what he's up to?

    I got your comment, long story short, I had to download a template from a site (blogger does not have any 3 column templates or tabbed pages, both of which I wanted). I used the Palm template from ourblogtemplates.com. I looked around for at a lot of downloadable templates offered and this was my favorite. You can customize EVERYTHING (hence why my blog looks nothing like the Palm they advertise). It is really time consuming though, to go through and customize every color and such.   2. This sounds interesting with the apricot preserves and soy sauce. And the almonds would add a nice crunch. Bet it was wonderful! :)
