Sunday is the Better Day

I actually think I may like Sunday's over Saturday's.  I especially love our routine and the fact that it doesn't change too often.  Saturday's are more unpredictable whereas Sunday's are more reliable.  I guess both have their advantages but for some reason, I think I like the structure more. 

I slept in!  Thank goodness because I was feeling beyond exhausted.  

When we rolled out of bed around 8am, I immediately started thinking about what to make for breakfast. 

Eggs sounded good, even though we usually don't make eggs for breakfast.  I often think of them more as a dinner and prefer sweet breakfasts over savory, but today was different.  I did balance out the savory with a good amount of sweet however. ;) 

Scrambled Eggs with 1/2 Whole Wheat Bagel, Cream Cheese and Jam 

Berries, Yogurt and a pinch of Granola 


Complete meal was delicious.

Afterwards, I showered and got ready for Body Pump.

I love taking Body Pump on Sundays.  Sunday's are my rest day from cardio and this class is about the only time I can get in a solid strength workout.  I killed the squat track today and feel myself getting so much stronger in every track.

When I got home, Toly and I spent some time cleaning the house.

Lunch was a medley of cravings that Toly and I shared.

We spent the next few hours of our afternoon running errands.  Lowe's, Target, Wegmans…. the usual suspects for a weekend shopping trip. 

I was starving by 5pm tonight and decided to start on dinner.  It's a good thing, because for some reason, this meal took me an hour to put together.  Not that the actual main dish was lengthy, but the overall prep of everything was time consuming but so worth it. 

I made Tempeh Sloppy Joes 


Toly has been asking for Sloppy Joe's for awhile and even though I made his with ground turkey, the tempeh version is also amazing.

I also made a quick slaw of shaved brussels sprouts, cabbage, lemon juice and evoo to go on top.  I served my sloppy joe's on a bed of greens with a slice of toasted bread on the side.


I also threw in a few sweet potato fries (but ended up not eating them because I burnt them pretty badly) and some roasted broccoli.


This meal was fantastic!!! 

I'm so sad to say goodbye to this weekend.  :(
