En-ChA-La-Das!



I told you I wouldn't be around last night.  We didn't end up getting home from Jen and Brian's until well after my bed time, which I predicted would happen.  

Let's see, I'm sure you are all wondering how the enchiladas turned out.  

I'll get to that, but first, let's start with cocktail hour.  

As soon as we arrived, Jen poured me a glass and we posed for our obligatory wine picture.  After all, we are each other's "wine bff's!" 

 Notice how we are not only share the same passion for food, wine and just about everything else in this world, we also dress alike.  This is why this girl is my best friend.  Always on the same page.

Okay, now the enchiladas.



Happy to report they were a huge success!  The boys gave the chicken enchiladas rave reviews and I can attest that the Pumpkin Black Bean were superb!

I will have to work on the recipe for you.

 Jen made Spanish Rice and a Side Salad to round out the meal.

And what is a dinner at Jen's house without one of her famous desserts?  It's a tragedy, that's what it is.

 Okay, just kidding, it would be so much a tragedy but I mean, come on, when you have things such as this to look forward to, it would be sadly missed if dessert wasn't a part of our get togethers.

Jen made Tiramisu for the first time and it blew my socks off.


Tiramisu is my favorite dessert by the way, just in case you ever need to know this for any apparent reason. ;)

I went to bed as I always do after I leave Jen's house, full of love, wine, good food, and sugar.  It's pretty much the best state of contentment I could be in.

This morning, I found it a little more difficult to pull myself out of bed but I remembered I had a date with Insanity and that somehow got me moving.

Today, I tackled the Resistance and Strength Cardio.  Just so you know, ALL of the Insanity workouts include hard core cardio.  I have a feeling I'll be singing opera during my next race with all the lung capacity I am building.

I'd say it was a full morning before 5am.

Breakfast was a new cereal I bought yesterday.

 Kashi Golden Goodness, Cinnamon Cheerios, Honey Chobani, Banana, Blackberries, TJ's Peanut Butter 

 I was really excited to try this new cereal, but to be honest, I couldn't even taste it all that much.  I guess I had too much going on in my bowl this morning so I'm thinking I may test out another bowl for dessert tonight.  I'll let you know.

I was out all day for work and I really didn't plan ahead for lunch.  I'm getting really bad at this lately, partly because of our living situation and partly because I just enjoy getting away by myself to eat sometimes.  Today, I really just wanted to enjoy a good meal in the quite of my own thoughts.

Luckily, where I was, there was a great little cafe down the road so I popped in to see what I was in the mood for.

My first thought was soup, but then when I saw the salad special, the soup idea dissolved.

 Winter Salad: 
Romaine, Spinach, Mandrin Oranges, Apples, Cranberries, Feta, Grilled Salmon 


I'm usually not a bread girl but this bread was sensational.  Warm, sweet, doughy, garlicy.  I couldn't help but to eat nearly all of it.

 After work, and an easy 6 mile run, I came home with every intention of cooking myself eggs for dinner.

But as I went to pull out the eggs, the enchiladas stared me in the face.


These were so good I couldn't wait to have them again.  I also put together a side salad that resembled my lunch salad, apples, beets, butternut squash, and pom arils.

As I was eating this and reading Monica's blog, I realized I was joining her in her noble creation of Meatless Mexican Mondays.  

Brilliant she is!  Feel free to celebrate your Wednesday this week with BFD Monica.  You scratch my back, I'll scratch yours. ;) 

I hope you are all staying warm these days.  If you leave in the North East, you are probably in physical pain from the cold.  Okay, maybe that is just me, but either way, I hope wherever you are, it's nothing but sunshine. ;)

  2. 45 minutes on the ET, 30 minutes of Insanity, and a 6 mile run? That is crazy! Does it feel like you are overdoing it a bit? Have you ever thought about WHY you are exercising so much?

    I noticed someone asked if it is affecting your "resolution" to gain weight. Is it?

    I only ask because I struggled with overexercising in the past. So sometimes I may be a little too inquisitive. If so, sorry!

    However, I only like them when I make them at home. Homemade enchiladas are the best!

  5. What a fabulous dinner with friends! Glad to hear the enchiladas turned out so well. And the Tiramisu looks ridiculous good. I definitely would have hit up those enchiladas for a repeat dinner too ;) Stay warm!

  8. Oh yum, I'm all for meatless Mexican food!! Although my favourite Mexican dish would have to be with spicy prawns diablo in tortillas!
