The Day After


It's the day after Christmas and all through the house……

Not a present was left, not even Sammy's toy mouse. 

The stockings still hung but empty inside…..

But the fridge is overflowing with leftover tide. 

Even though there was plenty of Christmas Breakfast Leftovers that needed to be eaten, I was feeling an overload of the rich and heavy foods and opted for something a little more rich in nutrients. 


Whipped Banana Oats, Berries, Vanilla Oikos, Almond Butter, Granola Sprinkle 

Toly did a good job on the leftover french toast casserole and hash browns so I didn't feel bad about wasting them. 

By the way, many of you commented on the Cranberry Walnut Pear French Toast Casserole and I based the recipe off of this one. 

The substitutions I made were Coconut Milk instead of regular milk, 2 egg whites and 1 egg, pears instead of apples, and the bread, which truly made this dish was Panera's Cranberry Walnut Panettone.  I also added a few crushed cinnamon walnuts on top. 

Really a fantastic dish!  

After a full day of rest yesterday, I was eager to get to the gym this morning.  There was rumor that we would be getting snow, so I wanted to head out early before anything began. 

Once at the gym, I spent 20 min on the treadmill, 10 min on the stair climber, and then did an hour Body Pump Class.  

Wow, it was rough.  Last week, class was great and I felt so amped.  This week, the weights seemed 100x heavier and I was quite exhausted when it was all over.  I guess those cookies really do weigh you down.  

It was an overall great workout and I came home, showered, and cleaned up until lunch time. 

Using more leftovers, I put together some egg sammies for lunch. 


Scrambled Eggs, Spinach and Crab Dip on Whole Wheat 


I grilled my sammie and ate this along with some beets and veggies with hummus. 

We laid low for the rest of the day and did some online shopping with our giftcards.  Macy's was having some good sales and we were in need of some new bedding and drapes for the new master bedroom.  I had to leave all of my window treatments with the old house, so I'm still looking to dress all of the rooms with blinds and window treatments.  Does anyone have any suggestions as to where to find good deals? I forgot how expensive this process is. :( 

Eventually, I started to get hungry again and decided to start dinner.  It was a good night for soup and since we had so many ingredients to use up in the fridge, I came up with a fantastic on the spot creation. 

Spicy Maryland Crab and Vegetable Soup 


Wow was this ever good!  Tons of veggies, tomatoes, a little hot sauce and lump crab meat. 

I made Toly a Corn and Turkey Chowder but forgot to photograph it.  He loved it though. 

We also tried to finish up the Brie and Apricot Pastry I made yesterday. 


For this recipe I simply took one Lite Brie Cheese Round, sliced it in half, spread Apricot Preserves in the middle, and wrapped it in crescent roll dough.  It's baked for about 20 min and turns into a gooey sweet cheesy dip that is incredibly delicious on warm bread or croissants. 

Well my friends, the Christmas weekend may be over, but the fun is not.  Next weekend we have plans to travel to Cleveland to visit Toly's family for New Years.  What is everyone else doing for New Years?

  3. Hope you had a really nice Christmas :) That Brie and Apricot Pastry looks AMAZING. Melty brie....SO good. Your New Year's plans sound great. We are just having Mandi & Bryan over to hang- I can't wait

    We aren't party people so we never do anything on New Year's. I'm usually in bed by 9 as usual.
