After Work Happy Hour

In other news, I haven't posted a picture of the house in a few days.  I thought you might like to see the progress…



We are so close to being under roof!  And good timing because this weather does not look promising.  Once it's under roof, we are in the clear for any winter storms. 

Today was a usual Friday and one that I can't really say was all too exciting until later on.  I did enforce all efforts to go the extra mile in making the morning just a special.  

How do I do this?  Why with waffles of course! 

2 Natures Path Waffles, Vanilla Chobani, Berries, Maple Agave, Erica's Granola (Fantastic!) 


I have been a loyal fan to Nature's Path waffles for some time now, but today was the first time I realized that they contain saturated fat.  I had no idea and I'm not very happy about it; however, I'll still continue to eat them.  Nature's Path is a fantastic company with so many wonderful foods that strives on natural, organic, gluten free, and no added ingredients.  I'm curious to see where the saturated fat comes into play with the waffles but I think I'll be looking at this more closely now with future products.  Has anyone else noticed this?

I had a pretty busy day at work and had to run around during lunch.  Planning ahead, I packed my salad last night but realized that it was just too un-photographic to even attempt. Don't get me wrong, it tasted fantastic!

After work is when my day got interesting.  My friend and co-worker, Jess decided to treat ourselves out for a girls night.  Mani's/Pedi's, shopping and dinner.

We went to Cafe Magnolia (one of my favorites) for dinner and split the Crab Spring Rolls to begin.


These were light, crispy, and delicious.  The raspberry chipolte sauce was also a fantastic compliment!

If you remember, Jess is my sushi friend.  We try to go out for sushi a few times a month over lunch but tonight, it was very nice to change it up.



For my entree, I had the Almond Breaded Goat Cheese Salad with Roasted Red Peppers, Strawberries, Roasted Asparagus in a Maple Balsamic.

I've had this once before and loved every single bite.  This time around, it proved to be just as good. 

This weekend is going to be fantastic.  Toly and I have a little getaway planned tomorrow and it is also the night of my company's annual Holiday Gala.

  6. What flavor waffle to you get?
    There are plant oils that contain saturated fat e.g. cocounut oil and palm oil.
