Off to a Good Start



Hi everyone! How was the weekend? 

I know that most of you were enjoying the most wonderful foodie experiences at the annual Foodbuzz Festival in San Fran and I have to admit, although I am so happy for you all, I'm a little envious.  Let's see, California, thousands of amazing bloggers, the most incredible food tastings….yeah, excuse my jealously but how incredible!!!  If I wasn't in the middle of moving, building our house, and actually saved for this, I definitely would have joined.  Next year! 

My weekend was great, despite not basking in the glory of blogger utopia, and today I woke up a little more at ease, knowing this week was already starting off a lot better than last. 

To emphasize this good start, I made Pumpkin Oats.  Well, these were actually Pumpkin Overnight Oats which I think I actually may like better.  Just think of sweet pumpkin batter in a bowl.  Yum!

I finally broke down and purchased a new oatmeal bowl.  I have a weird thing about eating oatmeal out of just the right kind of bowl and since mine are all in storage I picked up this little thing at Big Lots.  I love the shape, definitely unusual but perfect for oatmeal. 


It was a lovely day at the office with a few meetings thrown in.  Nothing spectacular but still very productive.  Lunch was eaten at my desk, once again (gosh, I'm making a habit out of this).  Greek Salad with smoke salmon.  I've noticed that if I eat a salad for my meal, I need to have a significant amount of protein for it to keep me full. This can seem tricky when you don't eat meat, but if you eat seafood, smoked salmon or tuna make a wonderful option.  Beans, tofu, tempeh, barley would all be great choices as well. 


I headed to the gym after work and noticed how full it was.  I don't know if maybe the fact that it gets dark earlier now that people want to work out sooner, but I've never seen the gym so full.  Either way, my favorite treadmill wasn't taken and I was able to get in 5 miles in just under 45 min. 

When I got home, I needed to come up with something for dinner.  I contemplated a few ideas and then finally decided on a hot grain salad.  

Quinoa with Asparagus, Acorn Squash, Mushrooms, Avocado, and Spinach 


I realize this picture doesn't look very enticing, but I swear it tasted delicious. I dressed the salad in a mixture of honey mustard and balsamic and added a little goat cheese that melted in so nicely.


And that is all for today. This week is off to a good start so let's hope it continues.

  1. Glad your week is off to a good start! The oatmeal bowl is so cute! Looks like a little pot for honey. I was a little envious of those who got to go to Food Buzz too. Next year!

  2. Sounds like you had a great day! I am particular about my bowls too - and where my cups have to be placed when I'm eating. I'm weird.

  5. What a unique and fun bowl! I understand about being picky. I'm very particular about my plates and bowls. I have certain bowls that I eat with certain foods. I also was a bit jealous of all the fun the foodbuzz festival folks had! But I'm happy that it went well, and now I'm eager to try to make it next year!

  8. I love that bowl!! I'm weird about my bowls too- I actually took some from my parents' house when I came to school because I'm so used to them!

  10. I am the same way with my bowls! When I moved back home I immediately bought new bowls for myself, which drove my mom crazy, but I just like to have the right size and height!
