To Be or Not To Be a Shakespeare Buff

I saw this quote on Diana's blog the other day and I immediately wrote it down and have been reciting it in my head over and over. 

Fun Fact: 
You may not know this about me, but I am a Shakespeare buff.  I majored in English in college and especially fell in love with British Literature, but more specifically, William Shakespeare.  My favorite out of all of his works is hands down Othello but MacBeth is a close second.  I could also spend an entire day dissecting every single one of his sonnets to find the underlying meaning of each line.  

Well now that you know this random trivia about me, I'd say it's time to move on. 

For a Monday, the day started off quite pleasant.  Nothing unusual, nothing strange, but just routine. 

I fueled myself after an hour on the ET with some breakfast. 

1/2 Green Apple, Blackberries, Kashi Go Lean Crunch, Kashi Autumn Harvest, Honey Chobani, Flax, Almond Butter


So colorful today! 

I love making bowls with so many different flavors, textures and colors.  Variety is my main goal when it comes to making a well rounded breakfast, in case you haven't noticed. 

I turned down a lunch offer today in order to stick with my vow to eat as much as I possibly can in this house before most of it has to be sacrificed with the move. 

Plus, there was no way I was letting this soup go to waste.

Arugula Salad with Beets, Avocado, and Roasted Asparagus Drizzled with Balsamic Glaze

When I got off work, I hit the gym for a little treadmill time.  I was feeling quite energetic (as I usually do at the start of the week) so I took advantage of the energy and ran 4 miles at a 8:30 min pace.  I completed sprint intervals for the last mile which was sprint at 9.0 for 30 seconds, walk at 4.5 for 30 seconds.  In all, it was a tough but satisfying 5 mile run in 44:12 min. 

Dinner incorporated my most favored fall veggies.  Butternut Squash and Brussels Sprouts. 

 I cooked the squash and sprouts in a pan until browned and then added 1/2 a chopped apple (which probably makes this apple number 3 for the day).  Once they were cooked through, I added a sauce made of Fig Balsamic, Dijon, and Maple Agave.  I let this finish cooking in the oven for a few minutes while I prepped the rest of dinner.


Which was a serving of my MIL's prized Pumpkin Kashi over spinach.  The fall veggies went on top along with a sprinkle of feta. 


And now I am fully ballooned by veggies overtaking my digestive system.  I do this to myself, I know. People with digestive issues should probably not be eating this much fiber in one sitting; however, I like to test my limits when it comes to produce.  

I'm trying to savor this last week here in our house but it's going too fast.

  5. As an english graduate student...you know it made me smile to hear about your Shakespeare love. I also love MacBeth. And Othello? So very good. Anything he touched was pretty darn good :-) Thanks for sharing your day, and thank you again for your sweet words and thoughts.
