Calm Beginning



There is something calming about my Friday mornings.  Maybe it's just knowing that a beautiful weekend is ahead, or maybe it's because I spend this morning to myself since Toly doesn't work on Fridays, but either way, I really do enjoy this particular morning in the week. 

I haven't really posted my workouts lately but they have been going something like this…..

4:15am- 45-50 min on ET (intervals) 
5:00am- 20 min of Workout DVD (Strength, Abs, Yoga rotation) 

I've still been running but not as much.  I try to make it to the gym a few days after work and usually fit in around 12-15 miles a week.  This is a big decrease from what I was doing (close to 40 miles a week) and my knees are thanking me!  I think the inability to run in the mornings has really been a blessing in disguise because it's forcing me to cut back significantly.  It's actually been quite nice to get back into other forms of exercise that I love and I truly believe that variety makes you stronger. 

Now back to my calming morning, I felt so at peace today that I even whipped up oats for breakfast.  Stovetop oats are usually saved for my weekends because when I make them, I like to devote a good amount of time in them, but today, I was feeling the investment. 

I made Butternut Squash Banana Oats 

 1/4 Cup Oats, 1/2 Mashed Banana, 1/4 Cup Almond Milk, Cinnamon, PP Spice, 1/4 Cup Canned Butternut Squash
Toppings: Banana, Blackberries, Mighty Maple, Pumpkin Butter, Vanilla Oikos and Granola

How is it possible that I have more toppings than ingredients?  Oh well, I love my options. 



Truly wonderful.  A great enhancement to my morning. 

Meetings all morning and then home for lunch.  

This is the final week of "Clean Out the Kitchen" so in my efforts, I've been exploring the freezer and pantry for things that I want to eat and not get rid of.  I have a few cans of Amy's soups that I definitely do not want to get rid of. 


This is one of my favorites.  I spiced it up a bit by adding a chopped green pepper and topped it with avocado, greek yogurt and arugula. 


Served along with carrots and hummus and a few chips for dipping.  As well as cantaloupe for dessert. 


When I got off work, I thought about going to the gym to run a few miles, but I just wasn't really in the right state of mind to run.  Rather than waste my energy on a bad run, I decided to use our dinky little complex gym for some weight lifting.  I realized I don't have much time with if left and I think I'll actually miss the stinky little workout room. 

Dinner tonight was more freezer items.  

Salmon Burger Pitas 

TJ's Grilled Salmon Burger, TJ's Pita Bread, Hummus, Arugula, Tomato and Feta, and Greek Sauce (aka greek yogurt, capers, garlic and oregano)

Toly's mom also gave me some of her cabbage salad.  I'm not really sure whats in it, but I think this batch had cabbage, peppers, raisins, plums and was in a sweet/sour dressing.  It's really delicious! 


Dinner was so good! 


Well our weekend is going to be filled with packing, packing and more packing!  One more week left and we're officially homeless for a few months. Good thing I have wonderful parents who are willing to take us in. :)

  3. Love Fridays :) May be my favorite day of the week. Workouts sound great. Amy makes some great products. I love the soups, Josh loves the burritos. cabbage salad??/ i wish I had a good recipe for this

  5. I also love that Amy's soup. Whenever I open a can, I always end up adding a ton of goodies...so my can of soup easily turns into three or four meals. I'm glad that you had such a calming morning...I need some of that peace. Thank you for your kind words and thoughts.
