You're My Extra Push


You guys are the best!  All I have to say is that I had one bummer day and immediately, I am flooded with kind words of encouragement, hope and well wishes for a better tomorrow.  

I honestly try not to complain or to ever allow my posts to project a negative connotation.  That is not the purpose of why I write.  I write to inspire, to connect, to feel good, to make others feel good and become more in tune with myself, my heart and my soul. 

But I have to say, there are times when I need to be honest or else I feel that I wouldn't seem real.  As much as I love almost every day of my life, there are definitely those days that are a struggle.  I am so honored to have people like you all in my life to be able to lift me up when I need the extra push. 




Now let me tell you about my MUCH BETTER day today! 

Breakfast was outstanding and blood free!  No fingers were sliced in the making. :) 

Cinnamon Pear Blackberry Hot Cereal/ Yogurt Bowl 

1/4 Cup Bob's Red Mill Cinnamon Apple Hot Cereal cooked in water, 1/4 Cup Applesauce, 2 TBL Vanilla Chobani, 1 sm pear, blackberries, 1 tsp cinnamon raisin PB, Pumpkin Spice Granola 



As you can tell, I love all different textures, which is why this particular bowl is one of my favorites. 

When I got home for lunch, I didn't have anything else in mind to make other than a similar salad to what I had yesterday at Cafe Magnolia.  

Basically, I took their Strawberry Almond Goat Cheese Salad and kicked it up a notch. 


Romaine and Spinach, Cabbage, Cucumber, Red Pepper, White Nectarine, Strawberries, Avocado, Asparagus, Walnuts and Goat Cheese


But I think the Fig Balsamic Reduction drizzled over top was the shining component. 

I also had a carrot with Almond Butter and Watermelon. 


Do you remember how I told you that Toly says I look like a goat when I eat salads?  It's true.  When it comes to salads, I shovel in the biggest bites my mouth will allow which usually results in heaps of lettuce falling out of the sides of my mouth.  

Much like a goat.  Or me, in this case. 



Oh my goodness, I can't believe I just posted a picture of me referring to myself as a goat. That's okay, you needed to see the truth! It's a good thing Toly loves me anyways. :) 

When I got off work, I was feeling much more in the mood to workout.  I hightailed it to the gym and busted out a much better strength workout than yesterday. 

2 mile warm up on treadmill
3 sets of 12- Bench Press ( 40 lbs)
3 sets of 10- Leg Curl ( 60lbs)
3 sets of 12- Overhead Press (40lbs)
3 sets of 10- Hamstring Curls (30 lbs)
3 sets of 12- Seated Row (50 lbs)
50 Crunches
5 min Bike cool down

After this and a walk with Sammy, I was ready for dinner. 

Now dinner tonight is going to take some serious explaining because I'm about to make a very bold statement. 

I made one of the very best bowls of oats I have ever made in my entire life!!! 

That's right.  I said it.  Now are you wondering what went in it?

Well, a little of everything to tell you the truth. 

I finally attempted…..

Savory Oats! 


I've seen savory oats on so many of your blogs for ages and they have ALWAYS been on my list to attempt, but I've never gotten around to it.  Why?  I have no idea.  This is quite possibly one of my new favorite things to eat. 

The base for the oats was incredible! 
  • 1/4 Cup Steel Cut Irish Oats
  • 1 Cup Water
  • 1/2 Cup Roasted Mashed Butternut Squash
  • 1 Blue Cheese LC wedge

So creamy, so luscious.  It reminded me of a delicious risotto.  But it didn't end there! 
  • Roasted Eggplant and Butternut Squash
  • Spinach
  • Avocado
  • Tomato 
  • Hummus
  • Tomato Paste
  • Overeasy Egg


And then, when you break the egg, and mash everything together in it's glory, you get the most outstanding flavors, creamy texture and unbelievable taste!


I have no idea why it took me so long to discover savory oats but you better believe it won't be the last time you'll be seeing them for me. 

Aren't you happy tomorrow is Thursday already?!?  I am! The weekend is going to be full of wonderful adventures and surprises and fun!  I can't wait. :)

  1. Hoooooray for today being better! yes, a fantastic day should always follow a not so fantastic day. Your lunch salad looks awesome. I just love fruit on salads. And the goat picture cracked me up. You have to take big bites in order to get a little bit of everything tasty ;) Its a requirement! Savory oats...mmm its been a while. fantastic. I haven't tried it with an egg on top yet- maybe my next batch! Happy (almost) Thursday!

  2. You are pretty damn adorable...even with lettuce in your mouth! I'm so glad that you had a better day today...it is amazing what positive words can do! I've been having a rough time, and I've received so many thoughtful comments (yours being some of them!) and they have helped me so much. You are a great woman and I'm glad to know you!
