A Day My Way


Finally, things are starting to turn around and go my way.  It seems that the Blogger issues have been resolved!!  YAY!!!  It feels so good to have my blog back. 

Other housekeeping items to discuss…..

I debuted on our very first Financial Education Webinar for my company.  For the past few months, we have been working on creating a financial literacy video geared towards our student generation.  The topic I discuss is Saving For College, which is one I think is essential for most High School students in today's world.  If you have a chance, you can check it out here….

So more things went my way this morning when I was able to get in a run on the broken treadmill at the gym.  It's been broken for weeks, but yesterday, I was playing around with some of the settings and I got it working.  I think my fix may be short lived because it did shut off on me right around the 6 mile mark, but I did just reach right under 6 miles today and I was so grateful for that.  It feels so good to be running again in the mornings. 

I had one of my favorite breakfast bowls this morning. 


1 small pear, Blackberries, 1/4 Cup Bob Reds Mill Cinnamon Raisin Hot Cereal, 1/4 Cup Kashi Cinnamon Harvest, Vanilla Chobani, Cinnamon Raisin PB, Granola Sprinkle 


I needed a breakfast with good satiety today because I knew I would be teaching all morning without a break and eating a later lunch than normal. 

Luckily, when I teach all morning, the day flies by and I don't really even have time to stop and think about my hunger. 

But after we were done, hunger hit hard. 

A few of my co-workers and I hit up Mikado Japanese Steakhouse for a sushi lunch.  

That makes two days this week I have had sushi.  Not complaining! 


My co-worker and friend Bryce believes he is becoming quite popular on this blog.  He now has begun quite the production of preparing his food to make the best photo opportunity to ensure his spot on the blog.

After lunch and work, I came home and did some strength training.  I contemplated going to Body Pump but I actually felt more inclined to do my own routine at home.  Sometimes, doing your own thing just works better and sometimes it doesn't.  Tonight, it worked great. 

Dinner was a recipe I recently made but I have been thinking about it ever since.  It was definitely time to recreate. 

Feels Like Fall Quinoa Salad 


  • 1/4 Cup Dry Red Quinoa, cooked
  • 2 Cups Roasted Butternut Squash
  • 1/2 Cup Roasted Brussels Sprouts
  • 1 Honey Crisp Apple, chopped
  • 1/2 Cup Peas
  • 1/2 Cup Roasted Chic Peas (I used my leftover Roasted Pumpkin Spice Chic Peas)
  • 2 TBL Roasted Pumpkin Seeds
  • 2 TBL Dried Cranberries  
  • 2 TBL Fig Balsamic 
  • 1 TBL Maple Agave
  • 2 TBL Dijon 
Mix all ingredients together and serve on a bed of spinach topped with goat cheese and balsamic glaze. 



I also toasted a slice of Apple Cider Bread and smeared on a bit of Apple Cran Chutney.  Delicious! 

Quinoa is becoming one of my favorite grains.  I love the nutty texture and the little bite it gives.  It kind of reminds me of eating Pop Rocks.  Does anyone else get that? 

I knew things would get better, they always do!  Just remember when life doesn't seem like it's going your way, this most likely means that your way probably isn't the right way.

  1. I can't the video to load.....I'm sure its fantastic though! Glad today was much better. I love that the treadmill worked just long enough for your workout :) What a fun dinner. Apple Cider Bread? I need this ...so good! Hope tomorrow is fantastic as well

  2. Saving for college is such a huge deal! My husband and I could not afford college when we got married at 20! Even before we got married, our families couldn't help us. We used every resource available. Now, he has a Bachelor's degree from OSU, and I have a 2 year from Palomar College in San Diego. No student loans...all the paperwork and effort is worth it...We are currently putting $100 every month for our son's college, so he doesn't have to rack his brain....

  4. Saving for college is so important. I hope to be able to send our children to college, worry-free. This, of course, will require a lot of planning now!   9. I looove quinoa. Have you tried it mixed with pumpkin puree? Sounds weird, but it's SO GOOD!

    And Bryce is too funny. I have a few friends who are all about having me take pics for the blog too. My one friend says she feels healthier, haha :)
