My Little Collection



It's no surprise that I have quite a collection of dishes.  Similar to shoes, I am drawn to buy my kitchen decor in pairs or batches, which probably explains why I have overflowing cabinets that are about to bust if I add one more glass. Many of you have asked about one of my dinnerware sets that I use most often and these are by far my favorite….

We this set as a wedding gift from my mother in law and it was purchased at Target to answer your questions. 

As I was putting the dishes away last night, I realized how much I love this little hobby of mine; however, I feel that I am going to be cursing myself the day I have to pack it all.  

Oh well, there will be plenty of cabinet space in the new house.  I told the builder to go crazy with the kitchen.  Heck, I'd even settle for the entire level as one big kitchen, but I don't think my husband would be very enthused. 

Okay, enough of the randomness, let's get serious….

How freaking cool is this camera!!! 

It has a "make me beautiful" setting.  Okay, so that's not really what it's called but it does have a setting that is made to visually enhance your face.  It takes away any imperfections, blemishes, and highlights all of your features.  I of course had to test this little function out.


What do you think?  Not bad huh?  I'm sort of glowing and this was without the flash. 
Impressive. 

What else was impressive was my bowl of overnight oats that I had for breakfast waiting so patiently for me in the fridge. 

Overnight Dark Chocolate Raspberry Oats

Last Night: 
1/4 Cup Multigrain Mix (Oats, Barley, Buckwheat)
2 TBL Multigrain Hot Cereal (Hodgens Mill) 
1 tsp flax
1 tsp chia
1/2 mashed banana
Raspberry Chobani
1 tsp Dark Cocoa Powder

Today: 
1/2 banana
Raspberries
"Granilla" (As Mama Pea's peas like to call it)
1 tsp melted Dark Chocolate Almond Butter
1 tsp Raspberry Jam

Is it just me, or does over night oats taste way to similar to cookie dough?  I almost feel guilty about eating it because it is just that good, but then I remind myself how healthy it actually is. 


Yeah, who the heck just eats Cheerios for breakfast anymore? Oh wait, Toly does.  Man, he has no idea what he is missing! 

With the oats were the essentials.


Coconut Iced Coffee and fruit 

I was delighted and fully satisfied for many hours until my next meal. 

Which was lunch of course. 

This was eaten at warp speed because I was running around all day.

The soup was so much better today.  It turned into a hearty thick "stoup" which I LOVED! 

When I got home from work, we had a meeting with our builder, which probably explains why I started thinking about moving as determined from the start of this post.  The closer we get to designing this house, the more excited I become.  However, with that excitement comes a great deal of stress.  I can't tell you how many times we've changed the plans and to be honest, I don't think we will ever decide.  Oh the joys of custom building. 

After the meeting, I was starving.  Excitement and stress apparently makes me hungry. 

I quickly put together Enchiladas for dinner. 

Veggie Enchiladas for me


Veggies: Squash, Zucchini, Pepper
Enchilada Sauce
Garlic, Salt, Pepper, Chili Powder
 Pinto Beans
Spinach
Topped with Salsa and baked

Toly had Chicken Alfredo Enchiladas

Chicken
Corn
Tomato
Alfredo sauce
Cheese
Topped with more sauce and cheese and baked

Naturally, this would not be a true enchilada without a hefty amount of guac. The chips came in handy to scoop up any innards that fell out and the pineapple was a perfect sweet ending to cool down the spicy heat from the dish. 

Fully belly!  

Full day tomorrow so I better call it a night.

  5. I love purchasing dishes as well :) Especially eclectic bowls and mugs that don't match the rest of my dinnerware.

    Your breakfasts always look absolutely delicious. You really do eat breakfast like a King!

    And those eats!!! YUMYUMYUM. Yeah I wouldn't settle with just Cheerios, but each his own. But his alfredo enchilada sounds wonderfully creative!!

  7. Haha my parents get so annoyed with my crazy dishes. We've know designated an entire cabinet just for my stuff! Congrats on getting a new camera...cool features :)

  9. So I don't think any camara could make you look bad...you are stunning, as always! Your enchiladas look yummy, and I couldn't agree more about the guacamole. I wonder how it would taste to dice up the pineapple and roll it in with the rest of the goodies? Thanks for sharing love!

  11. I'm totally obsessed with dishes too! And for the record, it is a total pain when you move..but worth it :) A full level kitchen sounds amazing. Glad to hear things are coming along with the house. Great Mexican night. We're doing that tonight- can't wait. I hope you had a wonderful nights sleep

  13. Great looking meals.. love the plates too- I keep throwing hints to my boyfriend that I'd like new dishes but don't want to buy them (wink wink) I think he's getting it? ha I really want to try those overnight oats!

  14. that is sooooo exciting to be able to design your own home! i don't even know how i would do it either - i would constantly be thinking of new ideas. just make sure you get a big ol' pantry for all your fun dishes ;)

    LOVE the idea of chicken alfredo enchiladas! so creative. and i do love my overnight oats too. the thicker, the better.
