Homemade Kombucha



Do you remember when I told you that my MIL made her own Kombucha? Well, not only does she give me homemade fermented tea, she also taught me how to make my very own. 

First, you have to get the actual fungus, or the Kombucha.  Now I'm not sure where she got this or if it's even legal (haha no I'm kidding!), but this is what it looks like….


Trust me, it looks a lot worse in real life.  Anyways, this mushroom grows until it reaches it mature potential and then produces its own juice. 

To make the Kombucha tea, all you do is boil organic tea, add the desired amount of sugar and then you place the Kombucha mushroom as well as its juice into the tea and let this sit for 7-8 days. 

I made a batch this weekend using organic Mango and Passionfruit tea with stevia and mint. 



Wow, I think I liked this better than the store bought.  Who knew I was capable of making my own probiotic elixir.

For those who don't know what Kombucha is….

It's a living culture of beneficial microorganisms, and in Kombucha's case, the whole is infinitely greater than the sum of its parts! Kombucha is delicately cultured - some liken it to fermentation - for 30 days. During this period, essential nutrients form like active enzymes, viable probiotics, amino acids, antioxidants and polyphenols. All of these combine to create an elixir that immediately works with the body to restore balance and vitality.

If you can get your hands on Kombucha, I highly recommend making your own.  Saves a TON of money and you can freak out your friends by making them think you have jars of organs in your kitchen, because really, that's exactly what it looks like. Haha, now I bet your dying to try it! 

Today was not as hard as I thought in the matter of getting back to reality. After taking a few days off from running, a 6 mile tempo run felt great!

And as great as the eating was on vacation, nothing will ever compare to my overnight oats that I look forward to every Monday.

I've been wanting to try to make Brandi's Banana Split Bowl for weeks now and last night I finally remembered to save the banana for the morning.

Last Night: 1/4 Cup Oats, 1 tsp Chia, 1 tsp Flax, Strawberry Banana Chobani
Poured on top of a split banana with strawberries, blueberries and pineapple, Topped with granola, peanuts and dark chocolate almond butter


Amazing!  Eating ice cream inspired breakfasts are where its at! 

 I was very surprised at how fast I was able to get caught up at work. 

I even had time to run home for lunch and put together a wonderful leftover salad that was exactly a replica of last night's dinner.

We met with our realtor after work to sign a bunch of papers, which is basically what we will be doing for the next few months. All for the best though.

When we got around to dinner, I wanted to make something quick, light and healthy.  After a few days of eating out and eating well, my body craved something clean. 

I made Grilled Tilapia over a Corn, Tomato, and Edamame Salad.



The fish was perfectly seasoned with EVOO, salt, pepper, garlic powder, lemon and paprika and grilled beautifully. I topped it with a small dollop of Basil Pesto as a last minute whim.  The salad consisted of fresh corn, edamame, fresh ripe tomatoes, basil and feta. 

On the side, grilled asparagus.  The whole meal was divine. 




Now that I'm all caught up, I can fully enjoy the evening.

  1. I still have not tried the kombucha....I dunno freaks me out....if I'm being honest :) Very cool that you made it at home thougH! I saw Averie at Love Veggies & Yoga do this and thought it was super neat. Glad you were able to easily fall back into your schedule at work and hooray for a great breakfast and morning run.

  2. I have not even tried Kombucha. I may have missed my chance with every place taking it off the shelves from possible alcohol content.

  6. It's so fun that your mother in law taught you how to make your own kombucha!! I agree, it does look like organs, but it tastes good so that's all that really matters. If you happen to have a Halloween party this year make sure to have lots of fermenting kombucha jars around! :)

  9. They pulled Kombucha off the shelves here in Colorado due to alcohol content issues...and I've been a bit weary about trying to make my own at home. I would be afraid of not doing it correctly and getting sick. But your batch looks great, and I know it must be A LOT cheaper than buying those expensive bottles at the store.

  10. So cool that your MIL is up on kombucha! I've been going through withdrawal since they pulled it off shelves at WF, but making my own really intimidates me! The mango/passionfruit flavor sounds delicious though!
