Early Wake Up Call


After yesterday's exhausting festivities, I was hoping to sleep in this morning.  Unfortunately, around 6:15am I heard the distant sound of my familiar alarm song playing faintly on my cell phone. I reached over to the nightstand where it usually lay but it was no where to be found.  Finally, I realized my phone must have been downstairs, so I pulled myself out of bed, ran down the steps and silenced the ringing.  Apparently, I had forgotten to turn it off from the day before so naturally, my plans to sleep in were against me. 

Oh well, on a brighter side, the extra time allowed me to catch up on some emails and blogging and work on imagining this glorious feast for breakfast…..

Fresh Berry French Toast


This would be TJ's Whole Wheat Cinnamon Raisin Bread soaked in a mixture of Almond Milk, Egg Whites, Almond Extract, and Cinnamon, pan grilled, and topped with fresh farmers market berries (which are incredible) Vanilla Chobani and Granola. 



Our Sunday Morning was just like any other Sunday morning.  After breakfast, Toly went to his parents and I had the house to myself to clean, do some laundry, and a little baking. 

I've had on overwhelming amount of Zucchini in the past few weeks between my own bounty and the massive gourds my dad has been harvesting.  Although I've been doing a good job making my way through it, I didn't want to overkill the grilled method and really started to crave a more sweet use for the vegetable. 

Banana Zucchini Chocolate Chip Muffins



Woah, these are amazing!  Now before you come to any astounding proclamations that my baking skills miraculously improved overnight, I have to admit that I credit 99% of their greatness to the MAJOR help from a Trader Joe's Banana Bread Mix.  Although, I did make many adjustments and additions and turned plain old banana bread into these incredible little Zucchini muffins and for that, I'm quite proud of myself! 

I paired my muffin with a perfectly ripe White Nectarine and a tad of Almond Butter. 




In an attempt to eat down the fridge this week, I continued with lunch and put everything that sounded and looked good into a big bowl and called it a salad. 




I believe I had an equal balance of fruits and veggies in there. Regardless, it was great! 

After lunch, I spent all of about 20 min outside, trying to relax but the sun was just too fierce for my liking and the couch look so much more inviting. 

It was so nice to spend a few hours just resting.  My body was still sore from yesterday so having some time to relax was completely needed and appreciated. 

When Toly got home, we took Sammy for a walk and later on, got to work on dinner. 

It was a fresh summery Italian Meal tonight and it began with bruchetta that was made with the freshly picked tomatoes from the garden.  (I love when the tomatoes are still warm from the sun) 



For Toly, I made Grilled Chicken over Lemon Basil Fettuccini in a light alfredo sauce.


And Grilled Scallops with Summer Squash over spinach and sun dried tomatoes for me.





Everything in this dinner was fresh, hearty, and delicious! 



Since we haven't had any down time together this weekend, Toly and I have plans to do just that tonight.

  1. haha- we must have been on the same negative sleep plan today! I was hoping to sleep in and at 645...my eyes popped open with no plan of closing= blah! Great french toast, amazing looking lunch salad, and now I'm craving bruchetta! Glad your muffins turned out well! I bet you're a better baker than you give yourself credit for. Ohhh Monday- are you tomorrow, really?

    i totally understand about the box mix pride - i am always astonded whenever i pull something out of the oven and it's delicious!

  5. I've forgotten to turn off my alarm before too- so annoying! At least you got a jump start on your day though! That salad looks beastly and amazing. Good thing I'm chowing on a huge plate of veg now, because otherwise I'd have some serious food envy! Glad you had a good weekend!
