Simply Spectacular

Hey friends! 

I think I would classify today as simply spectacular.  The humidity ceased, the sun was shining bright, not a cloud in the sky, and it was a crisp but warm (if that makes sense) 75 degrees.  Does it get any better? 

I started the day with some speed and hills.  I was unusually up for this run today. Mentally and physically.  Remember last week when I did my HIIT and I had so much trouble.  I had to stop every 5 min because my chest hurt.  It was weird because that normally doesn't happen but I guess it was just a bad run.  Today, it was good! 4 miles, 34 min, 10 min of core ab-work. Done!

Breakfast? Yes please! 

Pear Blackberry Yogurt Bowl 

1 diced pear, 1/4 Cup Kashi Go Lean Crunch, Handful of Kashi Harvest Nuggets, Applesauce, Vanilla Chobani, Blackberries, Almond Butter, Granola on top 



I was busy in the office all morning and broke for lunch around noon. 

For lunch, I made one massive tuna wrap.  I stuffed the thing with so much spinach and sprouts that it didn't hold up.  Small tear, but not even noticeable! 



On the side, Carrot and Cucumbers with Tomato Basil Hummus and Melon. 


A very clean and filling lunch but it left me completely stuffed.  I've actually noticed that my appetite is not what is use to be.  It's funny because I still try to eat the same amounts but I get so full that I can't even think about food.  Half the time, I'm not even hungry until I start eating something.  I really think it has a lot to do with the medication I am on but since I'm still working out as much as I do, I can't really cut back on my daily intake.  Oh well, I will take being stuffed over excruciating pain (as I had when I went through my major stomach issues a few months ago) any day! 

When I got home from work, I wanted to go to the gym for a lower body workout.  Well, I made it there, hopped on the treadmill for a mile warm up and then someone came in to use the weights.  Ugh, no dice! I left and came back to do a 20 min ab workout instead. Not all was lost thankfully. 

A little later, it was time to eat!  Reinstating our standard BFD Wednesday, I made Toly's absolute favorite, Frittatas! 

A few days ago, I noticed a Summer Frittata on Kristin's blog and immediately booked marked it in my head.  Since I had plenty of summer produce to use, it fit perfect into this week's BFD. 

Summer Frittata
2 eggs, 4 whites, Chopped purple and orange cauliflower, broccoli, yellow squash and goat cheese

The best thing about this was that EVERYTHING was local and fresh and organic. (except for the cheese) The eggs were farm fresh, the cauliflower and broccoli were from the farmers market and locally grown, and the squash was from my dad's garden.  Incredible and I swear to you, I could tell a HUGE difference in taste because of it. 


One of the best frittatas I have made! 

With a side salad of Arugula, Peaches and Raspberries with a little feta in a homemade raspberry balsamic. 


Since this is Toly's favorite meal, I will show you his favorite frittata.

I'm so happy tomorrow is Thursday.  Not that I have off on Friday, but it just means that its one day closer to the long weekend.  Plus tomorrow I have a really fun appointment in the morning!  Should make the day go fast.

  9. My appetite has been all over the place lately too- I think it has something to do with the warm weather! I feel like I'm constantly reminding myself that my body needs fuel! That salad looks absolutely amazing :) Hope you're having a wonderful week so far!

  10. Lauren you food looks amazing! I love all the stuff you are doing the fresh fruits. The idea of making a sort of dip for the pita chips is fab! :)
