Friday Face On


Today was my Friday, so this was my "Friday" face…..


We are headed to Cleveland tomorrow for the weekend to visit with Toly's family.  Don't worry, there is going to be a HUGE Russian party thrown in there, so expect to see endless amounts of food, vodka, and good times. 

This morning, I kicked out 5.5 miles before breakfast. 

It's hot in the mornings and all I really want these days are cool and refreshing breakfasts.  Fruit and Yogurt bowls are where its at this time of year. 


Pineapple, Kiwi, Blackberries and Blueberries with 1/4 Cup Kashi Go Lean and 1/4 Cup Kashi Go Lean Crunch with TJ's Pomegranate Greek Yogurt and Chia Seeds

Natures Path Flax Waffle with Dark Choc. Almond Butter and Raspberry Jam 



I had a lunch meeting at Panera and my camera was not invited.  I will tell you that my 1/2 Mediterranean Veggie Sandwich and 1/2 Strawberry Poppyseed Salad were darn tasty. 

When I got home from work, I had a strength session date at the gym.  Tonight, lower body….

1 mile warm up on treadmill- 7.5 at 1% incline
.5 mile hill walk- 5.5 at 10% incline
Leg Extensions- 12 reps x 3, 60 lbs. 
Weighted Bar Squats- 12 reps x 3, 50 lbs. 
Leg Curls- 10 reps x 3, 30 lbs
Alternating lunges (front and back) with bicep curl- 12 on each side 
5 min cool down on bike

All together a decent 30 min workout 

When I got done, I was ready to start dinner and proceeded. 

I know what you may be thinking, "wow, it's been a few days since Lauren has made nutbutter encrusted parsnip fries." 

No fear guys, tonight I came through for you all. 

Nutbutter Encrusted Parsnip Fries

I used the Sunflower seed Nut butter that I was sent in this batch as well as the TJ's Crunchy salted almond butter with flax and a tsp of coconut oil.  I really feel that the coconut oil is the key.  I guess you could use EVOO but there is just something about the butter and the coconut oil that mesh together so beautifully on these fries. 

I also made a killer salad….

Baby Field Greens, Fresh Beets, Sliced Pear, Avocado, Roasted Asparagus and Feta in a Maple Dijon Balsamic


As good as my dinner was, I have to admit, I was pretty proud of how well Toly's salad turned out. 

For him, I made a Pittsburg Steak Salad

Romaine, Tomatoes, Feta, Homemade Fries, Crispy Bacon, Fried Steak Strips, Garlic Parmesan Croutons, and Melted Colby Cheese


I am really looking forward to the weekend and seeing Toly's family.  It's always such a good time visiting with them and we haven't seen them in a long time so it will be nice to spend time together.  Plus, there is a BIG CELEBRATION to look forward to.  More on that later.

  6. i want to be russian and go to the party! it sounds like WAY too much fun.

    your meals are seriously restaurant quality - that salad is SCREAMING my name! have you done a post on your weekly grocery shopping? if not, i would love to see one because you always seem to have all the right ingredients on hand!!!

  7. I've been meaning to try those parsnip fries!

    Have an AMAZING time with Toly's family! In college a couple of my friends were Russian majors, and the parties they had at the Russian House were always so much fun.
