The End of the Beginning


It's the end of the beginning as I sit here typing this post on a Monday night.  The end of the beginning of the week that is. Actually, for a Monday, mine wasn't so bad. 

I DID NOT want to get out of bed this morning.  I slept like a rock after yesterday's cleaning extravaganza and when my alarm went off, I wanted to throw my morning run out the window.  But I always remember how much better I feel afterwards and how much worse I feel if I skip it and that is usually enough motivation to get my booty out the door. 

I was right, my 6 mile run woke me right up and put a smile on my face! 


Breakfast however, turned my smile into a full grin from ear to ear! 

Overnight Cherry Vanilla Oats

Last Night
  • 1/4 Cup Irish Oats
  • 1/2 Ripe Banana
  • 1 tsp Chia and Flax
  • Cherry Vanilla Yogurt 

       Morning
  • Splash of Almond Milk
  • Cherries and Blueberries
  • White Chocolate Cherry Almond Butter
  • Blueberry Jam 
  • Honey Almond Granola 
 
 With Iced Coffee and more fruit.  Stand out breakfast!

I worked in the office for a few hours and broke for lunch around 12:30pm. 

Last night, I put together a quick but delicious tuna salad while I was making dinner. Since most of the ingredients were already out and being used for the Shrimp Tuscan Salads, making the tuna was a breeze.



I also whipped up a smoothie and had more fruit!  It's a dangerous time of year for me and fruit. Our relationship gets kind of intimate. 



Sammy always makes sure to guard my food while I am doing the photographs.  He wants to make sure nothing gets in the way of a good picture! 


After work, I proceeded to the gym for a quick upper body.  I noticed tonight how much easier my strength workouts have become. I remember how hard it was for me to lift and now I've not only increased all of my weight, but it's not a struggle to get through my reps!  Sweet success, these guns don't lie! 




I was super hungry for dinner because I had forgot to eat my pre-workout snack.  Dinner surely made up for it.  This could possibly be the star of the week, it's going to be hard to top this one.

Grilled Veggie Sandwiches 

Grilled Eggplant and Squash on Garlic Tuscan Wheat Grilled Bread with hummus, Roasted Red Pepper Spread, Basil Pesto, Goat Cheese and Red Leaf Lettuce with Fresh Basil 





Toly's sandwich was rather impressive as well. Grilled Chicken with Tomatoes Feta and Bacon.



With Grilled Corn on the Cobb and Watermelon.



We were both so full but decided that this meal was one that was just too good to waste so we obliged for the good of the food and shoved it all down.  Amazing!  Truly it was! 

Now Toly is watching the new season of Entourage, our favorite show, but I missed the entire episode because I was busy blogging so I'll have to make him watch it again!  So happy that show is back! 

What is your favorite tv show? I have a few but I think Entourage ranks number 1.  Followed by Greys and then FNL.

  2. Grilled veggie sandwiches are the best espesh when eggplant is involved!

    I wish we had some fresh basil in the house. We used to have basil plants but I guess they died.

    I am going to have to make it soon. All those spreads on it - mmmm.
    My favorite would still have to be Grey's Anatomy even though I feel it's going downhill a bit.

  4. I love Desperate Housewives- but Entourage IS amazing, I have to agree :) your meals all look so delicious- especially that dinner. you are tooooo cute- seriously. yay for a great run :) xoxoox

    Your veggie sandwich looks amazing! I adore anything toasted...especially when there is cheese to melt. Your grilled veggies are making me want to make my own sandwich right now!

  6. Monday was a roughhhhh day for me too! My flight was all sorts of delayed and I only ended up with about 4 hours of sleep. So I totally feel for you :) Love the PSU shirt- whoop whoop. And that grilled veggie sandwich looks like my ideal dinner. Josh's favorite show in Entourage. Mine was probably Lost. Now?

  8. I love Entourage! This season looks so good! I'm pretty thankful for HBO filling up the otherwise dead summer tv season. My other favorites are Glee, Desperate Housewives, Modern Family, SVU, and a whole slew of Food Network shows!
