Simple But Extraordinary


I think it's the simple things in life that bring us the most happiness.  Just the other night, Toly and I had one of the best date nights in a long time.  We didn't do anything extravagant or expensive, we simply ate pizza in our pj's on the floor with a bottle of wine, some candles, while watching a good movie. It was pure bliss. 

Other simple things that make me fulfilled are flowers in full bloom, the warm summer breeze, sunsets over the ocean, and perfectly constructed peanut butter blobs that top my yogurt messes.

Aside from the Cinnamon Raisin Peanut Butter, there was also Kashi H2H, Cinnamon Puffins, Banana, Blackberry and Vanilla Oikos with flax.

You all know I like to have a complete balance of carbs and protein for breakfast.  It's extremely important to me to refuel and replenish properly after running every morning.  Especially after 6 miles, this is just what my body needed. 

I was so busy today at work.  I basically was running around all day from one appointment to the next.  At some point, I woofed down lunch, but apparently was so busy to even photograph or hardly remember. Let's just use this image from last night to illustrate what it looked like….


On days like today, it is so convenient to have leftovers.  Although, I didn't even have time to heat it up.  It was still very good cold.  Again, another simple pleasure that brought me joy today. 

Work ended on a great note.  I had my eval for my new position today and I could not have asked for a better one.  It felt so good to be affirmed that my work is noticeably commendable and that I am doing a fantastic job!  When you love your job, the company you work for, the people you work with, and what you do every day, it's so easy to put 110% into your work.  I am so blessed.  

Dinner tonight was, as my husband stated, "simple but so extraordinary!"  

Signs of summer that make my heart full….


Grilled Corn on the Cob and juicy watermelon.  Both were a gamble when purchased, both were a win when consumed! 

We also made grilled chicken sausages. Yes I know, I don't eat meat, but to me, these are not meat.  Okay, they are essentially, but I don't really think of them that way and are probably the only form of "meat" that I enjoy. Probably because they are filled with big pieces of veggies and to me, they taste nothing like chicken. It's weird, I know, but that is why I don't like to label myself as one particular diet follower.  I am 90% vegetarian and on a rare occasion will eat an all natural organic chicken sausage.  Sue me! 


Tj's Mushroom Asaigo Chicken Sausage with Mushroom Red Onion and Spinach Relish.  (Oh and just to note, this is the ONLY way I will eat these.  The relish is what really makes the dish, it's a sauté of red onion caramelized, with mushrooms, and spinach in a balsamic reduction….perfect!) 

More summery foods…Kale Chips, Locally grown tomato with basil.  


Dining outdoors always makes food like this just taste better.  

Simply Wonderful! 


I am hoping to get to bed early tonight.  This week has been so crazy that I am afraid it might start to catch up with me if I'm not careful.

  1. Aw- that date sounds so sweet. I love nights like that....much much more than anything extravagant. Glad to hear your eval went well- how exciting! Ow summer fruit- so exciting. Can't wait to dig into some myself. Hope the rest of your week is just as fabulous

  5. Sounds like such a cute date night- staying in with the BF is my favorite kind of evening too :) Watermelon and corn on the cob...summer sure is just around the corner, I can't wait!! Hope you have a great hump day love!!
