Obsessed With The Fries



Hey guys! 

Wow, am I sure glad that this week is nearly over.  It's been non stop and tomorrow is going to be just as bad but thankfully, we have a relaxing weekend with no plans.  Just one more day to get through. 

I ran 5 miles first thing.  It was a nice easy run and I found it more mentally relaxing than anything.  Just had a lot on my mind so 45 min to myself to think was quite lovely. 

Refueled with an awesome cereal/fruit/yogurt bowl…


1/4 C Kashi H2H, 1/4 C Cinnamon Puffins, A few Kashi Cinnamon Harvest Nuggets, 1/2 Peach, Blackberries, Blueberries, Peach Chobani, Flax and Cinnamon PB

With more berries.  I just realized that I have polished off 4 lbs of strawberries in less than a week.  Sweet! 


I had a busy morning of running around so I quickly grabbed a banana in case I would get hungry during the commute. 


I was out all day and around 1pm, I finally had some time to run home and grab a quick lunch.  I thought about stopping because I was so hungry and didn't want to spend time making something, but I thought it would take just as long to wait for food than to just make some myself.

Plus, what I really wanted, no one would make me…..


Frozen Mango, Pineapple, Banana, Spinach

This was so delicious but sadly, half of it was lost in a blender explosion.  Yeah, make sure the bottom of your blender is screwed on tightly.  Learned that lesson today. 

With the green monster I put together a veggie sandwich on a bagel thin. 


What when on it you ask?  Veggie cream cheese, hummus, arugula, squash, cucumber, onion and sprouts.  More veggies on the side (to balance out my overconsumption of fruit these days) with cottage cheese and salsa for dipping and a few grapes, because no matter how hard I try, I can't eat a meal without some kind of fruit right now. 



Lunch rocked.  

When I got home from work, I pulled up to a nice surprise! 

Toly!!! 

He had just gotten home after being away all week on a business trip.  How nice it was to see his handsome face again. 

We contemplated dinner, okay really I spent an hour being indecisive about it while Toly kept saying, "it doesn't matter", until I finally settled on the only thing my heart really wanted. 

I may have a problem….


Yes, that would be the third time this week I made Parsnip Almond Butter Encrusted Fries.  Obviously I've reached the point of obsession.  

More veggies on the side in the from of stemmed broccoli over greens and beets, topped with a touch of goat cheese and sunflower seeds. 

I also made a quick homemade pear sauce.  Simply sauteed pears with cinnamon. 



It was so nice to have a dinner partner again! 


Okay, off to hang with my man.  :)

  1. Hope everything is going well over there! Isn't running so therapeutic? And way cheaper than actual therapy! Great lunch- reminds me of a sammy I used to get at brueggers called leonardo de veggie ;) Hoooray for the man being home! That is the best feeling. Glad you went with your craving :) Happy almost weekend

  3. I hear you on the berry consumption- I had two pounds of strawberries yesterday alone. Ridiculous. Hope today is a little calmer for you, happy Friday love!!

  5. okay, okay - i GOTTA try those fries! and there is no shame in polishing off that much fruit. and no shame in gorgeous, healthy and amazing looking meals like yours. seriously - you have some of the best looking stuff ever!

  6. Those parsnip fries sound really good. I like to roast parsnips with just a little olive oil, and let them crisp up. I need to try adding spinach or other greens to my smoothies too. It looks like an easy way to add in a veggie to the day.
