Memorial Day Fajita Feast

Memorial Day weekend festivities continued today with a fantastic BBQ at my parents house.

I was able to sleep in a little this morning (6:30am) and relaxed around the house for about an hour before I made breakfast.  I wanted something light and refreshing today, so I went for the fruit and yogurt.

Mango, Kiwi, Berries, 1/4 C. Kashi Go Lean Crunch, Pineapple Chobani

I was craving nut butter like no other and I remembered about the latest package that graced my doorstep last week.  This one was one that I was extremely thrilled about!

For months, I have been drooling over Naturally Nutty on Kath's blog so when Katy from Naturally Nutty agreed to send me samples, I flipped!

Aside from being absolutely delicious, these nut butters go above and beyond when it comes to natural peanut butter.  Here is what the website states:

We make amazing organic and natural nut butters in a variety of flavors, all made with organic flax and organic hemp seed. Containing wholesome and organic ingredients, each jar has been handcrafted from small batches with the following benefits:

  • Organic Flax Seed (Omega-3, Omega-6)
  • Organic Hemp Seed (Omega-3, Omega-6 and Omega-9)
  • American Grown Organic Peanuts and Natural Almonds
  • No Stir Formula - Minimal Oil Separation! (Peanut Butters)

I really couldn't decide which one to try first.  Obviously I wanted to have them all, but I limited myself to two.

I used the White Chocolate Cherry Almond Butter on one 1/2 of my english muffin with mashed banana and the Vanilla Almond Butter on the other 1/2.

Verdict….

Ah-Ma-Zing!  To get the full taste, I made sure to like the butter knife after spreading and let me tell you this stuff tastes like icing.  It's incredible how nut butters have really taken on an entire gourmet life of their own.  Seriously, who eats just Jiff anymore when there are such things as Butter Chocolate Toffee Peanut Butter out there now.

Breakfast was so satisfying and perfect for what I had in mind.  I wanted to workout afterwards so I avoiding something hot and heavy that would weigh me down.

We headed over to my parents around lunchtime for a Memorial Day Picnic.

My dad went all out, as he usually does, and created a magnificent Fajita Feast!

Grilling up a storm!  Lots of meat (chicken and steak and shrimp) and a ton of veggies.

We also had all of the fixings….

Pasta Salad

Guacamole Salad (my contribution)

Fruit Kabobs

And much more….

I filled my plate with all of the good stuff

And went back a few times for more fruit! It was all so amazing.

The girls embraced the heat and worked on our tans during lunch.

My sister and My Mom

My Nanny and Me

After lunch, we decided to do a family photo shoot….

Me and Mom

Me and Brooke (my sister)

Brooke and Jason (her hubby) and Baby In the Oven

Me and Toly

Mom and Dad (being silly)

Mom, Dad, and Benny

My Nanny and Pappy with me and Toly

Dessert was had a little later.  Mom's homemade angel food cake with fresh strawberries and whipped cream.  A favorite summertime dessert!

It was such a fantastic day and now we are all pretty full, exhausted and entirely content.

This little one kind of sums it all up….

Happy Memorial Day!
