I'm a Believer!



Starting your day waking up to this face is always a fine way to begin a Friday. 


Follow that by this…..



Raisin Bran and Oatmeal Squares, Blueberry Oikos, Banana and Blueberries, flax, Mighty Maple 

With melon and cottage cheese and obligatory coffee, just a tiny bit though.  As you can see, I'm not a big coffee drinker!  (that's my subtle sarcasm in case you didn't pick up on it) 


I knew I had a ton of work to get done today, so I brought my lunch with the anticipation of working right through any kind of break.  I was right, I just barely had time to finish my leftovers.

Sadly there was no time to peel and eat the orange.  But surprisingly, this early lunch (11:30) kept me feeling overly full all afternoon.  Good planning on my part I guess. 

After I got off, I met Jen for a short walk so that we could catch up on our weeks.  It was lovely. 

I came home and nearly fell asleep for awhile before I was even hungry again.  Wow, that 11:30 lunch really sat in my stomach. 

Finally, alas, my appetite started to reappear so I thought I would work on dinner and hope it would grow in the process. 

Now, you know by now that I am a sucker for any advertisement of food that states "The Best Ever" "The World's Greatest" or "Award Winning."  So when I saw Angela's post entitled, "These Fries Will Change Your Life,"  I knew it would not be long until they made it into my stomach. 

Nut Butter Crusted Squash Fries


Original recipe from Diet, Dessert, & Dogs (Modified just a bit)
  • 1/2 of a peeled Butternut Squash
  • 2 TBL TJ's Almond Flax Butter
  • 1 TBL Crunchy PB
  • 1 TBL Coconut Oil
  • Sea Salt
Cut the squash into fry shape.  Mix together the nut butters and coconut oil (I heated them in the microwave for about 20 seconds so it would be easier to coat).  Coat the squash with the nut butter mixture and sprinkle with sea salt.  Lay flat on a cookie sheet and bake at 400* for 35-40 min. 

Ummmmmmmm……….

Let me just say………..

THESE TRULY DID CHANGE MY LIFE!

I will never think of a fry the same way again.  Lord almighty these were AH-MA-ZING!!!!!! 

Okay, whoever has not tried these yet….GO NOW!  I promise, you will fall in love immediately! 

I definitely consumed the entire batch with no problems what so ever.  I probably could have eaten another serving if my stomach didn't feel like it was going to pop.  

There was also a salad.  It was very good, but don't let that take away from the perfection of the fries please.


To top it off, I believe I discovered the very best "ketchup" for these fries. 

Cranberry Honey Mustard!


I now have another food to add to the top 10 favorites.  Move over sweet potato fries, these are over the top. 

I made Toly a classic chicken fingers and fries dinner.

I'm all alone on this Friday night.  Toly is out playing poker and I'm here watching the Flyers Game without him.  What's wrong with the picture? :) 

I'm feeling pretty worn out, so I think an early bedtime will happen.  

Tomorrow we have VERY VERY exciting plans in the morning.  I'll be back later to share.

  1. Oh I LOVE those fries too! Totally life-changing. :) I made them with parsnips, but I bet they are AMAZING with butternut squash! That's definitely what I'm trying next. :)
