Worth Every Bite


Hey there! 

Sorry for not posting yesterday.  Crazy wonderful day and by the time I got home, I went right to bed. 

Let's start from the beginning shall we?

Breakfast came first, and it was very enjoyable.  I made my favorite Pear Yogurt Bowl. 


 pear, applesauce, cinnamon, kashi go len crunch, vanilla okios, granola, flax and almond butter

With some vitamin C. 



I honestly don't remember too much from work, but I know I was busy. 

I did take a break for lunch. 

So, when I was at the Farmers Market last weekend, I spotted something I rarely see around here. 



A Kabocha! 

Even though winter squash season is over, I couldn't pass it up because I have probably only ever seen and bought these 3 times in my life.  

I sliced, seasoned and roasted. My favorite method. And added some brussle sprouts. 


Okay, this may be the first time that I have ever said this, but these veggies were NO GOOD!  Ah, I couldn't believe it.  The squash was awful.  No taste and completely mushy.  And even the sprouts weren't that great.  I guess it really goes to show that buying local veggies out of season just isn't worth it. 

At least I made up for the sub-par veggies with a killer salad. 



Lunch in the sun.  Although I didn't even the veggies.  Wow, I can't believe I just said that! Even drenched in ketchup, they just weren't worth it.  


The salad actually filled me up and kept me full.  But later in the afternoon I needed a little something more.  I started on my apple that I brought back to work with me and as soon as I bit into it, I realized the inside was completely rotten! 

Ugh, what is with my fruit and veggies today? 

So I tossed the apple and tried a new granola bar.  The Kashi Dark Mocha Almond.




Took one bite and threw out the rest.  I really thought I would like this flavor.  I love Kashi granola bars and I love dark chocolate, mocha and almonds.  Seemed like a sure thing.  But really, these were just gross.  

So I was striking out quite a few times with snacks today.  

But luckily, I had wonderful plans to make up for everything after work.  

Jen picked me up to take me out for my birthday.  She had the perfect night planned and it started at Chipotle….only the best place on earth!!! 

I ordered my usual….


The guy gave me extra guac because it was my birthday!  I think I will tell them its my birthday every time I go now! 






Someone asked me how I can possible finish the massive amounts of foods they give you at Chipotle.  First of all, let me say, I really don't think that it's an unimaginable amount of food.  Yes, it's quite a bit, but I've seen worse.  And I truly believe that my stomach magically expands for Mexican.  Just because I am small does not mean I can't throw down 2 pounds of guac and salsa like the rest of them.


Done!  Thank you very much! 

After our stomachs were filled to the brim with the goodness of Chipotle, we decided to let this digest for a bit and did a little shopping.  

A little later was when the real indulgence of the night happened. 

Okay, I need to first explain….

Now, I love love love ice cream, but it doesn't necessarily love me back.  My stomach is not a fan of dairy and for the past 5 years, I have dramatically reduced my intake; however, with my recent colon issues, I found that I wasn't able to tolerate hardly ANY form of dairy without making me seriously ill.  Well, since my colitis flare up has gotten significantly better, I started to add more dairy little by little in the forms of yogurt and cheese (but very sparingly).  I knew that one day I would be able to enjoy ice cream again, but still very carefully. 

Well, tonight, I decided to put my strength in healing to the test. 

As long as I have lived, I have NEVER had Cold Stone Creamery and as much as I love ice cream it was hard to believe. 

There happens to be a Cold Stone Creamery right beside Chipotle.  Dangerous combination, I know! 


I was so overwhelmed.  It took me a good 20 min until I finally decided on my creation. 

It was one of the most difficult situations I have ever had to make, but I finally chose the Sinless Cake Batter with Cookie Dough, Banana, Carmel and Pecans. 


Oh Wow!  This was incredible!!! 

I ate the entire thing and then felt like I was going to pop.  Guys literally, I was so uncomfortable and I can only imagine I gave myself a good idea of what it will be like when I am about to go into labor, but it was worth every single bite!!!! 

I didn't get sick, just extremely bloated.  I'll take some bloating for this any day! 

Jen and I had such a great night and I can't be more grateful for a best friend to celebrate my special day with! Thanks Jen for a wonderful birthday night out! 


Today was pretty standard, until I was surprised by these beautiful flowers from my friend who I work with for my b-day. 


They are Orchids and made my entire day! 


Just heated up my leftover tempeh stir fry from the other night and getting a ton of stuff ready for our trip this weekend. 


I still have some packing to do. We leave for DC in the morning.  Better get crackin'!

    and I've had that sinless ice cream before and had the same problems! I'm pretty sure that one has artificial sweeteners/sugar alcohols which tend to bloat me up like a balloon :\

    Hope your trip goes well in the morning!!! So sad I don't live closer to DC.

  5. I wish I could meet you in DC this weekend :( My family is coming into town though. We will meet some day, promise!

    I haven't had Coldstone in forever--I used to get it at least once a week in high school. So so so so so good.

    I love those Kashi bars...send 'em to moi not the trash!

  6. Yay for Birthdays! Hope you are having a wonderful Birthday Week!! I am not a fan of those Kashi bars either! Yuck!! And OMG, I can't tell you how jealous I am that you went to Coldstone and got my favorite creation! I always (like never had anything else there) get cake batter and cookie dough! I'm sure the other mix-ins just added to the wonderfulness of that! Glad your tummy held up so well! It knew not to act up because if it did, no more ice cream for it! Haha! Have a great trip!!

  7. I love this post!!!! I am with you on the being small but being able to throw it down. Huzzah :p Anyway, everything sounds absolutely delicious minus the foul veggies and that Kashi bar lol. Those veggies must've been gross if you didn't finish them hahaha. Oh how I wish I was heading to DC with you :( But I'll be there in spirit! I can't wait to see your adventures from this upcoming weekend. I love you sooo much!

  8. Glad you had a good birthday date!! Ohmygoodness, Coldstone...it's been FAR too long. I always get either sinless cake bater or dark chocolate, depending on hoe decadent I'm feeling. It ALWAYS gives me a tummy ache, but like you said, it's SO WORTH IT!! Glad your tummy held up to experience the deliciouness!

  13. Chipotle AND Cold Stone?!?!?!? How jealous am I right now??? ;)

    I would kill for some of that sinless cake batter ice cream. They don't offer the sinless version around here, so I have to settle for the reg cake batter, which makes me feel disgusting, but is so good that it's worth it!!!

    Loving the amount of guac the Chipotle man gave you - EPIC!
