Here we are again. Another start to what is going to be a fantastic week, right?! Well, let's hope so.
Mine is starting off busy as usual. I had to be at a work event rather early. This particular event was quite important, it was me, our EVP and our CEO that were in attendance, so I did the best I could to look entirely professional but still cute.
I've been having luck in finding work clothes as of late. I usually have the WORST time in the world finding professional attire that actually fits and makes me look my age.
Before I slipped into this little number, I first slipped into my spandex for a killer run. I did 7 miles! I love that I am FINALLY building up my speed and distance again after months of recovery. Lesson here: recovery is a slow process but entirely necessary. Don't push your body when it's not ready! It will take time, but eventually, you will get back to where you use to be.
Breakfast was made last night to avoid the rush this morning. I wanted to spend the extra 5 min. making myself look pretty. :)
Overnight Pumpkin Oats
Last Night:
- 1/3 Cup Oats
- 1/3 Cup Almond Milk
- 1/4 Cup Pumpkin
- Chia and Flax
- Cinnamon
Toppings in the Morning:
- Banana and Blackberries
- Pumpkin Bran Muffin
- Pecans
- Honey PB
- Pumpkin Butter
I heated these in the microwave today since I didn't use the yogurt. They turned out fantastic! As did the small bowl of fruit I had alongside. Wow, I certainly ate about a pint of blackberries today. They were good!
Since not much worth mentioning happened in between breakfast and lunch, I'll just move right into lunch.

Pretty much the same thing as last night, minus the ravioli.
I also had this new yogurt….
And I couldn't really decide if I liked it or not. It was good, but I just can't get into "runny" yogurts anymore. I'm just partial to Greek I suppose.
I did like it when I added a dice pear and some applesauce!
I think I shall recreate this for dessert!
So that was lunch. Delicious and extremely filling. My goal for almost every meal!
Dinner exceeded both of these things.
Stuffed Sweet Potato with Dried Cherries, Cashews and Coconut
For this recipe, I take a large sweet potato and bake it for about an hour or until it's completely soft. Then I slice off the top, scoop out the insides and add dijon, coconut milk, salt, pepper, cinnamon. Lastly, I top it off with dried cherries, cashews and coconut.
Amazing! Honestly, this is one of the best spuds you will ever eat!
And if sweet potatoes aren't your thing, you could certainly make a stuffed tater with an good ol' Idaho.

But lately, I've been having luck at Express because they recently added a smaller sized line to their collections. I know it's pricey, but the clothes look really nice and actually fit my body nicely.
Good luck finding a new wardrobe. If you're anything like me, shopping is such a headache! :(

I'm 5'2 (okay more like 5'1 and 1/2) but my drivers licensee says 5'2. :) The pants are definitely long, but nothing a good pair of heels won't fix. I've also had them altered before. Just take them to a local place and it's pretty inexpensive. I completely understand though, being short stinks! :(
