Playing Dress Up

Here we are again.  Another start to what is going to be a fantastic week, right?!  Well, let's hope so.

Mine is starting off busy as usual.  I had to be at a work event rather early.  This particular event was quite important, it was me, our EVP and our CEO that were in attendance, so I did the best I could to look entirely professional but still cute.

I've been having luck in finding work clothes as of late.  I usually have the WORST time in the world finding professional attire that actually fits and makes me look my age.

Before I slipped into this little number, I first slipped into my spandex for a killer run.  I did 7 miles!  I love that I am FINALLY building up my speed and distance again after months of recovery.  Lesson here: recovery is a slow process but entirely necessary.  Don't push your body when it's not ready!  It will take time, but eventually, you will get back to where you use to be.

Breakfast was made last night to avoid the rush this morning.  I wanted to spend the extra 5 min. making myself look pretty. :)

Overnight Pumpkin Oats

Last Night:
  • 1/3 Cup Oats
  • 1/3 Cup Almond Milk
  • 1/4 Cup Pumpkin
  • Chia and Flax
  • Cinnamon
Toppings in the Morning:
  • Banana and Blackberries
  • Pumpkin Bran Muffin
  • Pecans
  • Honey PB
  • Pumpkin Butter
I heated these in the microwave today since I didn't use the yogurt.  They turned out fantastic!  As did the small bowl of fruit I had alongside.  Wow, I certainly ate about a pint of blackberries today.  They were good!

Since not much worth mentioning happened in between breakfast and lunch, I'll just move right into lunch.

Pretty much the same thing as last night, minus the ravioli.

I also had this new yogurt….

And I couldn't really decide if I liked it or not.  It was good, but I just can't get into "runny" yogurts anymore.  I'm just partial to Greek I suppose.

I did like it when I added a dice pear and some applesauce!

I think I shall recreate this for dessert!

So that was lunch.  Delicious and extremely filling.  My goal for almost every meal!

Dinner exceeded both of these things.

Stuffed Sweet Potato with Dried Cherries, Cashews and Coconut

For this recipe, I take a large sweet potato and bake it for about an hour or until it's completely soft.  Then I slice off the top, scoop out the insides and add dijon, coconut milk, salt, pepper, cinnamon.  Lastly, I top it off with dried cherries, cashews and coconut.

Amazing!  Honestly, this is one of the best spuds you will ever eat!

And if sweet potatoes aren't your thing, you could certainly make a stuffed tater with an good ol' Idaho.

Like Toly's…..

Stuffed Potato with Bacon, Cheese and Sour Cream

I made salads to go with our potatoes.

Arugula, Radish, Apple, Beet and Cucumber

His and Her Plates

And that about sums it up for today.  How was your Monday?

Goodnight guys!

  1. Adorable outfit! You looked fantastic! I agree- its tough to eat regular yogurt once you get used to greek yogurt. Ummmm guess who else had stuffed potatoes tonight! This guy!!

  2. Hi lauren! I'm a long time reader, first time commenter... but love your outfit for work today and was wondering where you purchased your skirt and where you've been having luck with other work attire. I'm starting a job soon in which i have to dress professionally and i'm also petite and am having the most difficult time! Any advice would be appreciated. Thank you!!

  3. Hi anonymous!

Thanks for reading and an even bigger thanks for commenting. I actually bought my skirt at Ross for only 7.99!!! Score! But lately, I've been having luck at Express because they recently added a smaller sized line to their collections. I know it's pricey, but the clothes look really nice and actually fit my body nicely.

Good luck finding a new wardrobe. If you're anything like me, shopping is such a headache! :(

  4. STUNNING outfit!! Very chic :)

Hope you're doing well, dear Lauren!

  5. that outfit makes you look so skinny. do you have problems with your hormones and getting your period since you run so much and are so tiny

  6. Anonymous,

If you want to talk more, please email me. I don't really feel comfortable discussing such personal questions on my blog.

    Thanks! :)

  7. I love that outfit! Really cute! And congrats on an awesome run! :)

  8. thank you for responding so quickly!! do you mind my asking how tall you are?... i'm only 5ft and even the smallest line at express doesn't fit well :( PS I'm the first anonymous poster and i did not post the second comment

  9. pps i actually just tried to leave my aim name, but got a msg saying it couldn't be verified for some reason... aaand i dont own a blog, thanks again :) (orginal anonymous poster) aka alex :)

  10. Anonymous #1-
    (aka Alex)

I'm 5'2 (okay more like 5'1 and 1/2) but my drivers licensee says 5'2. :) The pants are definitely long, but nothing a good pair of heels won't fix. I've also had them altered before. Just take them to a local place and it's pretty inexpensive. I completely understand though, being short stinks! :(

  11. thank you sooo much! haha my drivers license says 5'2 aswell! :) if it's not obvious, i loveee your blog

  12. That outfit is adorable on you, definitely very professional! YAY for building running endurance- I know it's been a long process, but it's better to ease back into it than to jump in and risk hurting yourself!! Glad you're doing well :) Hope you have a great Tuesday!!

  13. the stuffed sweet potato sounds delicious! do you always have coconut milk in your fridge?!

  14. Lovely pics and combos, girls!
Thanks for the sweet potato recipe, btw ;)
    Have a great week!

  15. Lauren, you are giving me hope! Congrats on the 7! I know I just need to lay off the long distances, and in time I'll be able to (and want to) run again.

  17. CUTE outfit! And what a great idea with the sweet potato. I love that combination!

  18. i love the his and hers plates :) whenever I cook with my BF I always have a sweet tater and he always has a regular one LOADED with sour cream (love the stuff!) too cute!

the combination of those flavors in the sweet potato sounds AMAZINGGGG...i am obsessed with dried cranberries and always looking for new ways to use them in recipes!!
