Love Should Come First

"Love should come first; it should be the beginning of and the reason for everything."

Caitlin posted this quote today and I immediately feel in love with it.  There is actually a lot more to it, so be sure to go over there and read the whole thing.
I have a thing for quotes.  I sort of collect them.  Words in general have always fascinated me which is why I always had a strong desire to pursue writing.  I fully believe that peoples' words have the power to make a significant difference in this world and every time I come across a verse that sticks out, I write it down and save it in a book that I keep.
Something you may not have known about me. ;)
Well, before I read this profound statement, I was having a little bit of an "off" day.  Nothing dramatic, nothing to worthy to note, just simply "off."
Even though my mood may have been off, my breakfast was definitely on.

Tropical Yogurt Bowl
1/4 Cup Kashi Go Lean, Pineapple, Kiwi, Blackberries, Strawberries, Pom Chobani, Chia, Crumbled Vegan Pineapple Muffin Piece

This was amazing!!!  I love how fresh and delicious fruit is during this time of year.  I crave it at every single meal.

Lunch was also based on another strong craving.

When I got to work this morning, a co-worker and I were talking about the combination of eggs and jam.  I revealed that I eat this all the time, but also add to the mix dijon and avocado which basically makes one of the best sammies you could ever eat.

Then all I wanted was to eat this all morning.

So I made it for lunch.

In the form of a wrap.

With a side of orange.

And "fries." (Roasted Acorn Squash)

I had to eat this quickly because I was running to a meeting in the afternoon.

The meeting lasted for most of the rest of my day and I didn't get back to the office until later than I anticipated.  Needless to say, Zumba was missed tonight. :(

Oh well, I was actually feeling really run down this afternoon.  I came home and took a 10 min cat nap which felt amazing!

I woke up hungry, but more so thirsty for this….

Yep, it was just that kind of day.

This tasted so good as I sipped while cooking dinner.

Grilled Romaine Casear Salads

These were incredible.  I cut a whole head of romaine in half, drizzled each half with EVOO and S&P, and then grilled each side for about 2 min.  I topped mine with grilled veggies (eggplant, zucchini, red onion, tomatoes) and seared grilled tuna.

Toly had Grilled Chicken and a Baked Potato.

Have you ever grilled your lettuce?  It's amazing!  Toly deemed this one of the best salads he has ever had, which is saying quite a lot! :)

Now I smell brownies nearly finished coming from the kitchen.  They are for tomorrow but I just may need to test them out now! ;)

Have a wonderful evening guys.

  5. i just caught up on about four of your posts - whew! your yogurt bowls are amazing as always, and i am SERIOUSLY jealous of that salad. i have a theory that if you grill or roast anything, it tastes better.

i also collect quotes! in fact i have a quote book, so we should swap some favorites sometime :)

love ya girl - happy almost weekend!

  7. Grilled lettuce? I might have to try that on my George Foreman. But I'm trying to recreate your tropical yogurt bowl (using soy yogurt). Something about summer screams tropical/yummy fruit. Though I'm still riding my pear kick :)
