Going Green

Happy Earth Day!

I was hoping to celebrate Earth Day this weekend by starting my garden; however, I hear they are calling for rain all weekend….boo! :( 

Oh well, I'll get it going eventually.  

This morning, I was in a better state of mind than yesterday and remembered to wear my socks for my run.

However, the socks did not do much in terms of preventing my already formed blister from irritation.  I noticed my toe start to hurt half way through my run and figured it was just from the rubbing.  When I got home and took off my shoe, it was apparently a little worse than I had thought…...



Kind of gross but I really didn't even feel it.  I guess I am just that extreme! :) 

Now that you have seen my bloody foot, I think I shall entice your taste buds with some tantalizing food pictures.  

Delish Breakfast! 

Overnight Tropical Oats


Last Night:
  • 1/4 Cup Oat Bran
  • 1/4 Cup Coconut Milk
  • 1 TBL Protein Hemp Powder
  • 1 TBL Flax
  • 1/2 TBL Chia
  • 1/2 Mashed Banana
  • Frozen Mango
Toppings in the AM:
  • Kiwi and Blackberries
  • Piece of a Crumbled Vegan Coconut Pineapple Muffin 
  • PB Drizzle (White Choc. Wonderful and Coconut Oil) 

Keeping with the tropical theme, I also had some sweet pineapple. 

During the morning, I sipped on this.


And LOVED it!  This flavor is my favorite so far. 

I worked an event today at the place where Toly works so we were able to eat lunch together.  Unfortunately, I wasn't allowed to take pictures.  His workplace has a stick policy against cameras on base.  (He works for the Department of Defense) 

After work, I came home and got ready for Zumba.  Quick snack for pre-zumba fuel….




Cantaloupe, Cottage Cheese, and Pistachios 

After Zumba, a walk with Sammy, and some emails, I finally worked on my dinner. 

Tonight was an awesome stir fry. 


Tofu Coconut Apricot Stir Fry 



This one had tofu, broccoli, red onion, butternut squash and pineapple in a sauce made from soy, coconut milk and apricot preserves. I served it over spinach and I topped it off with sprouts and peanuts. 

Delicious! 



I also had a slice of Multigrain bread with Laughing Cow and Apricot Preserves. 



Eating alone because Toly was out watching the draft.



Something happened tonight after dinner that is a very race occurrence in my house.  

I baked! 

You guys know I can't and don't bake, but tonight, I was feeling called.  I really don't know where this came from, but it doesn't happen often so I thought I should listen to the calling. 

I made the simplest thing I could think of with the least amount of ingredients and work in hopes that it would turn out edible. (This is usually how my baking goes)

Magical Protein Peanut butter Cookies

Don't worry, they are completely legal.  The "magical" refers to the fact that they actually came out awesome! 


These were super easy to make!

30 Grams of Vanilla Protein Powder (I use Living Harvest Hemp Protein) 
1/2 Cup of Naturally More (all that was left in the jar)
1/2 Cup of TJ's Almond Butter
1/4 Cup Brown Sugar
1/4 Nutraval Sugar Blend
1 TBL Vanilla 

Mix, shape into balls, mush with a fork and bake at 350 for 10 min. 

I sampled one right out of the oven and almost hit the floor!  These are so good!  




Unbelievable!  I baked something that actually tastes good!  Not only good, these are fantastic!!!!  

Now my whole house smells like warm peanut butter and I am being called back into the kitchen to eat more cookies.  

I think I should listen to this calling too!

  2. Love all of the tropical- ness in your eats today. Mm pineapple. Amazingness. Glad the workouts went well. Despite the bloody toe. I've totally had that happen before. And yayy for baking. Its sooo relaxing. I have lots of baking planned for the weekend- can't wait. Enjoy your Friday

  9. AH your foot! I once read on Frayed Laces that she was so into running, she didn't realize she'd cut her fut badly, either.

    Your stir-fry looks delish! There's a similar recipe in Eat, Drink & Be Vegan I want to try.
