Car Sick and a Recipe!


I think the day after a car accident is more of an ordeal than the actual accident itself.  I spent all morning on the phone with insurance companies, car dealerships, and different agents.  What a headache! 

Ugh, the good news is my car is mainly cosmetically damaged and can all be fixed to look brand new, but the bad news is its going to take about 2 weeks!  I did get a rental to get me through, but I miss my Murano already.  :( 

I started the day with a 5 mile run.  My knee was feeling sore yesterday from the race, so I rested it and iced and today it was feeling just fine.  I'm starting to think that my knee issues may be stemming from my IT band.  It seems that when I roll it out, I feel so much better.  Does anyone know if the IT band runs down the outer side of the knee?  I can't remember.  Most of my pain is coming from the left side (outer) on my left knee and I think that may be due to my IT band.  

Anyways, after a good run I was hungry obviously. 

Breakfast was a bowl of cereal and yogurt. 


1/4 Cup Cinnamon Puffins, 1/4 Cup Oatmeal Squares, 1/2 Cup Multigrain Cheerios, Banana, Blackberries, Vanilla Okios, White Choc. Wonderful PB



Accompanied with some delicious berries!  Finally the berries are beginning to taste as they should….sweet, juicy and fresh!

Work, as I mentioned earlier was just crazy.  Thankfully, I had an office day so I was able to get the whole car fiasco sorted out. 

After I dropped off my car, I came home for lunch. It was cold and rainy and I have been saving this for a rainy day….



But I also wanted to eat some of this because I think it has become my new favorite bread….


Soup and Sammie it was!

I heated up the soup and added chopped sun dried tomatoes.  I don't remember why I started doing this, but I love adding sun dried tomatoes in pea soup.  I can't imagine eating the soup without them now. 



And for my sammie….

1 slice of Multigrain bread, TJ's 3 layer Hummus, Avocado, Tomato, Sprouts

Completed with carrots, the rest of the tomato that didn't fit on the bread, a pickle and fruit. 



What can I say, I like a variety.  

Dinner tonight was so good it got its own recipe post! 

On a whim, I decided to make Stuffed Peppers.  I love stuffed peppers but always forget to make them.  The thing I love most about this recipe is that you can change it so many times and make it so many different ways. Here is how it went tonight….

Tempeth Orzo Veggie Stuffed Peppers



1/2 Cup Cooked Orzo
1/2 block of tempeth
1/4 Cup Zucchini, diced
1/4 Cup Yellow Squash, diced
1/2 cup mushrooms, diced
1/2 cup diced tomatoes
1 TBL balsamic
1 TBL Dijon
1 TBL Lemon Juice
Salt Pepper Basil Oregano
1 pepper (any color) 


Sauté the veggies and tempeth in a skillet and season with salt pepper basil and oregano.  


In a separate bowl, combine the balsamic, dijon and lemon juice.  Add to the cooked veggies.  Let this cook down for about 3 min.  Add the tomatoes and stir to combine.  


Place the cooked orzo in a large bowl and add the veggie mixture.  Stir everything together and stuff the mixture into a seeded pepper. (You probably won't be able to fit it all in the pepper, so you can let it overflow into the pan) 


Top with goat cheese,




And bake at 350 for 20 min.


Devour! 


I served the pepper with a side salad of pear, dried cherries and walnuts. It was a fabulous meal! 



Okay, time to turn off my brain.  Mindless TV please!

  1. Hey girl! Yes- that does sound like an IT band issue! What a beautiful breakfast bowl. I'm so excited about berries. I'm baking with them tonight!! Dinner really does look fantastic. I wish I could take the texture of tempeh because I enjoy the flavors and how easily it takes on the flavors of various sauces. Have fun relaxing :)

    That's what happens to my left knee when I run too. I've been told it's my IT band too so ice ice ice and don't push it. You don't want to pull it or it'd be disastrous :(

    However, that stuffed pepper looks yummy! I think I missed the stuffed pepper memo today since Anne made one earlier too- hehe.

  4. Ugh, sorry to hear about the car troubles...I'm glad you're SAFE though! It's easier to fix a car than a person :)

    I love the idea of adding sundried tomatoes to split-pea soup. TJ's split pea is already one of my favorites, so that would make it even better! And thanks for sharing the stuffed pepper recipe; my mom always makes them with meat, so it's nice to have an alternative I can enjoy!

  5. Well atleast the damage isn't too bad! I was hoping your car wasn't totaled. That would be downright awful. But you know what? Your eats are soooo delicious sounding! I really want to take a bite of that sandwich. I love TJ's 3-layer hummus. That may be the only hummus I'll actually pay money for.. at a grocery store that is lol. And that stuffed pepper.. divine! I haven't made stuffed peppers in forever. There's this cheese that I used called haloumi.. it doesn't melt it grills :D It's so neat, you should try it some time.

    p.s. I roasted the brussels sprouts and shallots with olive oil, maple syrup, apple cider vinegar, and s & p.... TRY IT!! It's amazing :D

  6. I can relate to the car accident ordeal, at the end of last year I hydroplaned and crashed head on into the cement expressway wall, spinning backwards in rush hour traffic and totaling my car . It was one of the scariest experiences ever and dealing with the "aftermath" was definitely not fun! Just be thankful you are okay and your car will be as well, 2 weeks is nothing :) I'll be thinking about you hoping it all goes well!

  8. sorry about the auto! marshall has a rental car right now, too, and is missing his "baby" like you wouldn't believe. i laugh at how attached he is to his car! i am so into your colorful stuffed pepper recipe, yum! i have never made orzo myself, but i do love to eat it.
