"Happiness is nothing more than good health and a bad memory."

What a perfect quote to illustrate the recent unfolding of my life.  This past week has been nothing but improvement and continues to get better each and every day.  My heart is so happy to be feeling well again and I finally finally feel like I am entering back into my normal state of health and happiness.  I couldn't be more grateful.  When your health is compromised, you truly begin to appreciate the moments and abilities that you do have and nothing else in the world seems to matter.

Today was absolutely perfect! I have been looking forward to a wonderful day for so long and I was fully determined to ensure that today was nothing but spectacular.

Thankfully, I had a good night's sleep, but was up rather early.  One of the side effects of the medicine is insomnia, but thankfully, it's not as bad as I thought it was going to be.  Just some tossing and turning and waking earlier than I wish, but it could be worse.

I putzed around the house for awhile, doing some random things and waited for my handsome prince to wake from sleep.

I was starving for breakfast by 8am and since our usual Sunday breakfast will be missed tomorrow, we decided to make a big enjoyable Saturday breakfast to enjoy together this morning.

Scrambled Eggs with Avocado and Dijon (my favorite way to eat them) with 1/2 bagel and cream cheese, Maple Soy Sausage, and orange slices

Toly's plate with bacon

We leisurely enjoyed this delicious breakfast with the crisp breeze drifting in and the warm sunshine pouring over us.  It was a beautiful thing.

I was feeling so great this morning and the weather was just too perfect not to partake in a run.  I am actually signed up to do a 5k tomorrow morning and I have been contemplating whether or not I was going to do it all week.  Obviously, I haven't been running for the past 2 weeks, but I figured I would just play it by ear.  I really have been feeling so much better and it continued to get better every day.

I tested things out today with a beautiful run and took it really easy. I'm not really sure what I did, because my Garmin died 5 min in, but I assume it was somewhere between 3-4 miles.  It felt great!  So excited for the 5k tomorrow, and even more excited to start running again next week.

Later in the morning, I did something that I have been looking forward to for weeks now.  I pampered myself with a trip to my stylist.  I really needed a fresh look, like more than you could ever imagine.  Feeling like death for the past month really starts to take a toll on how you think you look.  Feel 1000X better now!

Toly picked me up from the saloon and we immediately grabbed a lovely sushi lunch.

I started with the glorious Miso Salad

And I ordered the Tropical Roll (Fresh crab, avocado, and mango).  So refreshing and utterly amazing! Toly ordered a Soft Shell Crab Roll.

Such a wonderful lunch!  We devoured it!

After lunch, we ran a few errands, lastly stopping at Wegmans to pick up the fixings for our much anticipated grilled seafood feast tonight!

When I was in the hospital last week, sipping cold chicken broth and sucking on ice cubes, I vowed to Toly that when I felt better we were going to celebrate with a HUGE seafood feast!  We have been looking forward to this for way too long.

Our menu:

  • Grilled King Crab Legs
  • Grilled Corvina (hearty mild white fish, similar to a Grouper)
  • Grilled Asparagus
  • Bruchetta with grilled Cibatta Bread

The King of the Grill with the King of the Legs

Toly likes to keep me away from the grill, but I manage to sneak my appearance from time to time.

He is truly the master behind the grilling though.

Our feast grilling away….

Bruchetta

My plate of amazingness!

And one extremely happy girl!

The end!

It was pretty much unbelievable!!! I'm slightly comatose right now but it's so worth it.

We are now about to run out to get our free Italian Ice to celebrate the 1st day of Spring.  Free Ice is something you just can't pass up!

Hope you all had an incredible day today!
