Completely Together


Do you ever have one of those days when you feel like the universe is completely aligned?  Everything seems to be in order, life pans out accordingly, and you feel so put together and on top of things?

Gosh, I wish every day could be like this, but since a perfect world is not in the least bit realistic, I take what I can get when they do occur. 

Today, was one of those days of complete togetherness. Every moment unfolded as scheduled with no surprises, upsets, or frustrations in between. 

Lucky me, right?!?! 

I woke up exactly at 4:25am and wasn't a second late on to start my workout at 4:30am.  

30 min on the ET - solid! 
30 min of Level 3 Shred- intense! 

Shower, primp, dress by 6:15am.

Breakfast, 6:30am.


Irish Steel Cut Oats, 1/2 Banana, Raspberries, Hazelnuts, Coconut, Dark Choc. PB, and Raspberry Jam

Juicy Grapefruit for quench. 


7:30am- Arrive at work, check email, messages, ect. 

4:00pm- Go home

4:30pm- 20 min of Core Strength (Abs and Upper Body) 

5:30pm- Start dinner

Tofu Sloppy Joes

1/2 package of tofu
1/2 green pepper
garlic
1 C tomato sauce
1 Tbl mustard
1 Tbl soy sauce
1 Tsp Maple Agave
1 Tsp Brown Sugar
Chili powder, Cumin, Oregano, Salt and Pepper

Sautee the green pepper and garlic for 5 min.  Add the tofu and cook for another 3 min.  Add the remaining ingredients and simmer for 10 min. 




This is such an easy and fast recipe.  Not to mention completely delicious! 




I served them with Butternut Squash fries and roasted asparagus. 



Mmm, delightful!!! 

I made Toly's with ground beef and gave him waffle fries and corn.  He LOVED his plate as well. 


It's only 7:30pm and I'm completely done with everything for the day.  Now, I can just sit back and relax entirely. 

Wow, what a great day!

  1. My day worked out strangely perfectly as well (probably because we're secretly twins separated at birth ;)). Your sloppy tofu looks awesome. I really want to try this. What brand do you purchase?
