Carbs Carbs and More Carbs

That's about all I feel I have been eating these days, but to be honest, carbs are the one thing that sits extremely well with my healing tummy.  It's funny because I've never really been too much of a carb girl.  I was always able to pass on the bread basket and I am not a pasta or potato lover by any means, but I am beginning to realize what the hype is all about.  Carbs are quite tasty, chewy, and feel so good for a hurting stomach. 

Take for example this bagel.  This would be a plain white bagel with plain cream cheese.  I can't tell you the last time I had this for breakfast.  Probably when I was in junior high.  Simple but yet it was so delicious! 


As good as it was, I must say, I am really starting to miss my oatmeal, fruit infused cereal and yogurt bowls, and other breakfast staples.  I think I will try some plain instant oatmeal tomorrow and see how it goes.  So far, things have been going very well by slowly adding more and more fiber and whole grains.  

Another thing I am starting to twitch without is vegetables.  What I wouldn't do for a big, veggie salad with the works.  That one may need to wait a few more days, but in the meantime, I am finding that cooked veggies are doing the trick. 

Lunch today was certainly a reflection of that. 



I heated a piece of my dad's egg white quiche, drizzled it in ketchup, and roasted some brussles on the side. 


I also began testing the fruit situation with a few orange slices.  Happy to report I didn't have a problem with them.  And to balance out the meal, a small cup of cottage cheese.  Delicious lunch! 

And just to show you how I really can't live long without these staples in my life, dinner tonight was more veggies in the soup form.

I heated up the leftovers of the Rice soup that my dad made me and spiced it up with an entire can of green beans.  Yes, I ate the entire can of green beans.  Wow, my body must be severely deprived of its greens because those canned green beans never tasted so good.  I also added just a tiny touch of crumbled goat cheese for a little extra flavor.  Amazing decision! 


Toly's soup was spiced up with some diced chicken and lots of cheese.  


We enjoyed our soup with a slice of garlic bread and some diced pineapple.  It turned out to be a wonderful leftover meal. 



Well, thankfully, I think its safe to assume I got my veggie fix for the day.  Hoping next time I can start to have some fresh ones back soon, but I'll just take what I can get at this point.

  1. CARBS. love 'em. i was going to say, maybe you could try instant oats since they are more processed.. and then you wrote that! hah. glad you are getting *some* form of veggies! have a great night, sure love you!

  2. I would be majorly itching for fruits and veggies if I were you too! Glad to hear the easing back in is going well so far!! Do you guys have weekend plans? Hopefully you can get out a bit more too- I'm sure you're itching for that as well :) <3 ya girly

  3. oh girl...live it up in carbland! i can't tell you the last time i had a white bagel and cream cheese, but it looks mighty fine :). glad you are managing to get in some veggies - lots of love to you girl!

  4. Aw girlie, I am the same way about my veggies. I crave them like no other. It's weird lol.. when I was little I use to finish off bags of carrots no problem and I also munched on lettuce. Am I Bugs Bunny's daughter or something??? Also plain bagels with plain cream cheese=the bomb.com. You're right--it's simple but so yummy.

  5. YAY CARBS!! White bagel with white cream cheese sounds so good right about now! I'm glad to hear that things are going alright for now. I hope that things continue that way. Going without veggies must be torturous! Hope you're having a wonderful Friday :)
