Back to a Week of Normalcy


Start of a new week, which means my first official week of normalcy.  I'm actually looking forward to a solid 5 days of routine and now that I've been feeling better, I'm hoping it's only going to continue from here on out.  No set backs! 

I was really hoping to start my normal week just like old times with a morning run.  I had taken about 2 weeks off (aside from a few miles this weekend) and I was more than ready to jump back on the horse and get my training back on track.  

Yesterday evening, however, I started to notice a slight pain in my left knee.  It started to hurt more and more as the night went on.  I figured I would see how I felt in the morning, but as soon as I hit the treadmill, I noticed the pain was too significant to ignore.  Hmmm, I think I may have done a little something in the 5k.  Nothing major, but I'm going to stay off of it for another day or so and hope it goes away. 

I still opted for a great workout on my ET and some Tae Bo, but I really was bummed about not being able to run.  This 10 mile race is just weeks away and I really don't feel ready for it.  Ugh, it's frustrating, but maybe I'm just not destined to do this now.  We'll see.  I'm not throwing in the towel quite yet. 

Regardless of a failed attempt of a running start this morning, I didn't let it effect my good mood. 


Feeling refreshed and alive and so much healthier!  Also, I am loving my new hair cut and that always puts me in a good mood! 

I was actually feeling a cereal overload this morning.  Must be the 3 bowls I am consuming at night before bed.  I just can't help it, it really does make everything digest better at night. 

I put on my thinking cap and came up with a sensational alternative to cereal! 

Waffles! 

All we had were Eggo's but I didn't care.  They were mighty tasty! 

2 Eggo Waffles, Mighty Maple PB, Banana, Blueberries, Pecans, A touch of Blueberry Oikos and some Cinnamon

Delicious! 

I was quite surprised how full this kept me.  It wasn't until 1:30 that I eventually made it home for lunch. 

And lunch was equally delicious! 

I heated up the last of my dad's leftover Rice Soup, added a can of green beans, some goat cheese and fresh basil. 



On the side, some garlic bread and kiwi with grapes. 

It basically rocked! 

The rest of the afternoon went by quickly and before I knew it, the day was over.  Love when that happens. 

Dinner tonight was an impromptu BFD. For some reason, I couldn't get this egg sammie out of my mind all day, so I figured, why wait until Wednesday when I could just enjoy it now. Duh! 

Toasted Sourdough Bread, Dijon, Spinach, Scrambled Egg, Avocado, Crofters Fruit Spread

I also roasted some brussels sprouts and shared 1/2 a grapefruit with Toly. (And I did sneak in a bite of Toly's mac and cheese because it just looked way too good to pass up) 


Toly's Sammie was his usual combo- Egg, Bacon and Cheese


With a side of Mac and Cheese

I know I say this a lot, but this egg sammie was one of the best I have ever made.  All of the flavors in this combination were outstanding.  I can't really explain in words how well this all worked together.  You will just have to trust me and then go make it for yourself. 

So is anyone else watching DWTS tonight?  I've never really gotten into the show, but I am extremely interested this season only to see Kate Gosselin.  I know, it's very petty of me, but I just can't help it. What can I say, I enjoy the mindless celebrity reality TV like the best of us.

  2. Glad you decided to take it easy this am given the knee pain. I am keeping my fingers crossed for you that it goes away fast! All your food looks amazing but I'm going to say breakfast looks best! Love the waffles and the incredible toppings. Hope you have a nice night

  3. You look great!! A new hair cut always makes me feel good too - just makes your hair feel so healthy! Glad you took it easy on the knee. Hope it feels better soon!

    Eggos = Childhood breakfast! Delish!! I'm watching DWTS for the first time from the beginning. Usually I just watch the last few to see who wins but I'm going to try to stick with it this time. Hope you had a great Monday :)

  4. i still can't believe you ran such a fast 5k after feeling so sick! you;re super woman! i used to love eggo waffles as a kid - especially the ones with four mini waffles attached in a square that you could rip apart lol. i secretly like kate gosselin and hope she wins haha

  11. Your blog looks great, and your hair cut is gorgey! I don't think I've ever seen Eggo waffles looks so darn good! I think it's the big hunks of blueberries and bananas. SO yummy! I hope your knee feels better. Take it easy, Lauren!
