Working for the Weekend


Oh the weekend!  It's finally here and I am more than ready.  For some reason, this week seemed fairly long for only working 4 days; that always seems to happen.

Oh well, it's over now.

I woke up a little stiff, so I traded a morning run for a lovely yoga sesh.

It was lovely indeed and just what my body needed.  Listening to my body when it's trying to tell me something, like "stretch me out" is quite necessary I am discovering.

After yoga I made a stunning bowl of cereal.

So good.  So very good!

Work was pretty calm today.  I didn't have to leave the office so I was able to get some much needed things done at my desk.  Deadlines are creeping up on me for some rather important things, so banging out 8 hours at the desk was needed today.

I came home and felt the need to move after sitting on my bum all day.

Went to the gym, ran an easy 3 miles, and did 30 min of strength.  It was intense and I felt wonderful afterwards.

Dinner was a highlight of a new Trader Joe's product….





Could not WAIT to try these! I always hear you all rave about them and since I have a love relationship with Veggie Burgers, these stood out like a sore thumb.

Even though this is not new to me, I was extremely content to re-stock my supply of Chutney and decided this would make an excellent addition to the Masala Burger.




I was; however, quite devastated to hear that my other beloved flavor, of Apple Cranberry Chutney has been discontinued! The horror!

I also made my favorite side dish.



Roasted Acorn Squash with Salt, Pepper, Cinnamon, Smoke Paprika and Agave





The Burger was dressed with Laughing Cow, Chutney, Avacado and Cholua 






Awesome dinner!  Loved the burgers.  Not sure if they outdo my favorite Dr. Praeger's, but they do come dangerously close.

I made Toly a Chicken Cordon Blue Burger


Chicken Patty with Shaved Ham and Melted Muenster with Roasted Potato Wedges


Now I am about to catch up on Grey's since I couldn't even make it to the opening scene last night.  Thank goodness for DVR.  The only show in my life that I actually try to keep up with and I can't even stay awake for it.

  1. i think short weeks drag on because you expect it to feel a lot shorter than it really is. does that make sense? ha. i have heard good things about those TJs burgers. i like that chutney! and oh no, the other has been discontinued? i think i have a jar left. sigh. discontinuations are the worst.

  2. Glad to see I'm not the only one who eats acorn squash skins! My fiancé makes fun of me fit it! Haha!! Question: what yoga program do you do? I love Pollys yoga but am always looking for more variety!! Have a great weekend girl!

  4. YUM! The acorn squash looks so yummy cooked like that. Fabulous Friday night dinner. Josh's mom just brought me a whole restock from TJs- I am SOOOO excited. As always, love the his and hers dinners. Hope you guys have a great, relaxing weekend!

  8. Oh my gosh I love the Apple Cranberry Chutney, why are they discontinuing no!! I guess I better thank my mom big time for stocking me up with 2 jars of the stuff during the holiday season! Haven't tried the mango ginger however, sounds great though :)

  9. Ooo the way you make the acorn squash sounds really good!!! Have you tried Sunshine Burgers?? They're my favorite veggieburgers. My favorite flavors are Original and Southwest (haven't tried the breakfast flavor yet). I don't get why companies discontinue an item that everyone loves. WHY?? You know what would be amazing?? If they had PB Puffins in bulk bins.

  10. Those TJs burgers are amazing! I should have picked up a box of those yesterday. I feel you on this week - even though it was "short" it was way too long!

  11. So glad Sammy is up and at 'em! It's so scary when pets aren't acting like their usual selves, because they can't verbalize what's going on!!
