Drunk off Yoga, Full off Burritos



This has been one of the quickest 5 day work weeks that I can ever remember.  I have been CRAZY busy, but in the best way!  I can't explain to you all how much I love my new position.  I'm sure I will have moments of insanity, but for now, I am loving every second.

I woke up this morning completely surprised that it was Friday.  I was operating on the running schedule of taking Friday's off and cross-training, in prep for a long run on Saturday morning.  However, since I am unable to do "long" runs these days and I'm also not really training right now, it made complete sense to change things up a bit.  I've decided I am going to run what I normally run on Fridays and take the weekends off from running.  It will be a nice change, and the idea of sleeping, doing some yoga in my PJ's and eating oats on the couch with some Gossip Girl on Saturday mornings just sounds so appealing.

Afterwards, I refueled with a delicious and balanced breakfast….




1/3 C Rasin Bran, 1/4 C Puffins, Banana, Blueberries, Blueberry Okios, Mighty Maple and Flax





With more carbs and protein (fruit and cottage cheese). Surprisingly, this sat well with me, which looking back is quite surprising because of the amount of dairy I consumed.  Well, it's actually not that much (a TBL or two of each) because too much dairy will leave me in shambles.  Not a good impression to leave people with on an early work morning.  Good thing I have my nut butters and fruit for protein!

After hours of work that FLEW by, I broke for lunch earlier than normal.  My stomach started yelling at me for food around noon.





I heated up some leftover "deconstructed lasagna" from the other night.  It was rather superb reheated.  I love a hearty warm vegetable lunch.

After I got home and did about 40 min of yoga sculpt, I proceeded to lay on the floor in a state of drunk relaxation for another 10 min.  I'm not sure how it's done, but doing yoga at the end of the week always leaves me feeling like a pool of jello (in a completely good way).  I am trying to convince Toly to join me because he is ALWAYS complaining of sore muscles and achy bones.  I don't think he is sold quite yet, but I'm working on it.

I wasn't hungry at all when I got home, but immediately after my yoga sesh, I was famished.

After having random and distinct dreams of Chipolte, I have not been able to stop thinking about burritos and guac.  Good thing I had the ingredients to create something along these lines.




Peppers, Onion and Mushrooms, Black Beans, Salsa, and a generous amount of guac

Toly's burtio had meat….

Steak, Bacon, Cheese, Corn, Black Beans, and Tomatoes


So amazing! (mine that is, not Toly's, but I am sure he would say the same about his if you asked him)



I made a little condiment spread on the side of romaine and baby spinach, shredded carrots, more salsa and guac, and okios. The last of the Sweet Potato FSTG tortilla chips were used for scooping any loose ends and the sweetest pineapple to cleanse a spicy pallet.

Now that I have settled my Chiplote fix, I am sure it won't appear again for another few days.  It's a good thing I just discovered that we DO have a Chipolte in my neck of the woods.  How I did not know this is beyond me, but let's just say I will be making a PLANNED stop there in the next week or so.

Okay, off to watch some T-Vo with the boys.  What a way to ease into a weekend of nothing but relaxing.  Perfect! :)

  4. I am so happy to hear all this good news! And your weekend mornings sound sooo appealing. I do yoga on saturdays too and on sundays it's pilates and Zumba! Seriously so much fun and just letting loose and stretching everything out from a week of tenseness! I love the sound of your burrito! The first time my mom and I went to Chipotle we had NO idea what we were in for. We each stared blankly at the mondo burritos. lol it was soo funny. We took our fork and knife and started digging in.

  6. There's a yoga/pilates class on Fridays at 5:15pm at my school gym. I used to go to it every week and literally just pour my entire week into the class. I should start going again!

  10. So glad to hear you're liking the job- VERY exciting! Great eats all day long, especially the chipotle like din din. I wish we had one :( I love cooked peppers and onions. Totally delicious. Enjoy the weekend!
