The Results Are In

Hey everyone!

Well, I'm just going to dive right in because I finally have my results from the biopsy of my surgery.

I went back to see the doctor today for the first time since my surgery 2 weeks ago. I have been diagnosed with Anctinomycosis, which is a rare bacterial fungal infection that is treatable with long term treatment of antibiotics. Trouble is, I'm not the best patient for taking antibiotics, because it appears that I am allergic to just about everything out there. After some talk with an infectious disease doctor, they seemed to find another medicine that I can take, so we will give this one a try.

But sadly, that wasn't all. If you remember, I mentioned that I had to stop taking the original antibiotic because of an allergic reaction. Well, it appears that I have developed Colitis as a result from it. If you don't know what that is (I sure didn't) it's basically another nasty infection of the intestine that results in awful stomach issues. So now I am working with my medical doctor for that one.

Oh and it also turns out that I may need another surgery to remove a lump of tissue from my cheek which will turn into implanting plastic implants. And then, there may be plastic surgery to fix the incision on the outside of my face. But that is down the road, we need to get the infection taken care of first.

Oy vay, I just want it to end. But honestly, I expected this. I knew that this surgery was not going to be the end of it. I knew there would be a long road ahead of me. But thankfully, I am not in dark any longer. I know what it is, how to treat it, and can move forward! Thank the Lord for that!

Okay enough of the medical mayhem, on to bigger and better things!

Good thing this stomach problem is not depleating my will for good food, because that is when I would be truly devastated. Although I may have more trouble digesting it, I still crave things in my life such as my Pumpkin Oatmeal!

I used my leftover tofu and veggies to make the most beautiful and delicious salad for lunch today.
Having leftover salads truly make my day. I don't think there is any other more enjoyable lunch to have at your desk than a salad with amazing leftovers.

When I got home from work, I had a pleasant surprise waiting for me. Every girl's greatest joy; a kitchen full of veggies!

This was my "thank you" gift for watching Benny while my parents were away. My dad knows me so well!

I didn't waste any time in getting use out of my veggies. Tonight, I made Stuffed Potatoes.
I've made these several times before and several different ways, but I swear this one takes the cake.

Well, time for some tea, maybe a cookie or two and some nice unwinding. It was a long day!

  3. oh baby doll! I'm so sorry! What a pain in the behind this all has been. I'm glad you at least know the details of the situation now. I hope they find medicines that work ok with your body. the stuffed potato looks incredible.

    You are the strongest person I know putting up with all this and being so positive. Seriously, you inspire me. We're all here for you, Lauren!

  7. Lauren, I'm so sorry to hear that you have to go through all this :( But you are such a strong person! The way you seem to be handling this with such a great attitude is something to look up to. If you ever need to vent or just anything I'm here for you! I love you sooo much and you deserve the best. I know that carrot cake rice cream will do the trick hehe! If it didn't melt I would send you a pint of it right away. I hope you have a wonderful day tomorrow filled with all the delicious eats you always put together. Big hugs and kisses for you my love!

Oh dear...I'm so sorry, girl! this must really suck, since you thought all were behind you...I can understand that you're probably feeling frustrated right now...but please keep your peace...everything will work out fine. MEanwhile, you've got all of us keeping you in our prayers...ain't that a blessing itself?

  10. That stinks that it's not an easy fix, but at least you have a diagnosis and know what might be on the road ahead. You just have such a great attitude about this, and it's so refreshing to see :) I hope that they do find medications that will work for you! I know that can be frustrating.

    The same thing happened to me taking antibiotics. My doctor also believes that the antibiotics are part of the reason I can no longer have dairy.... I've spent quite a bit of time trying to figure out a healthier alternatives... and have a few tried and trues!! email me, as I don't want to get into all the details here.
