Peace On Earth

T'was quite a peaceful day indeed.

Sorry for not delivering a BFD post last night. Truth be told, BFD got postponed to tomorrow night. I was actually feeling pretty crummy and just wanted to sleep. Toly had plans to go out, so we just went the easy route and heated up some leftovers. Don't worry, I'll be back tomorrow with a spectacular BFD dinner.

This morning was quite similar to the past few mornings. Mornings are actually the worst and it takes me awhile to get myself in a comprehensive state where I am finally able work up enough energy for an appetite.

I was still feeling pretty queasy (these antibiotics have certainly causing some nasty tummy issues, but slowly, I think they are working their way out of my system).

I really wanted toast. So toast I had.

Peanut Butter/Pumpkin Butter Banana Toast with Cinnamon

I also had a little yogurt with some of my Homemade Granola.

Breakfast was lite, but good. I couldn't bring myself to heavy oats. Hopefully tomorrow, because I sure do miss them!
I also got to move a little today. Some light Hill Walking was perfect to get some movement in my sore legs. I lifted a little too, but nothing too straining. I'm really trying to ease back into everything and take things easy. Hopefully, next week I will be back to my routine.

Then, I spent about 2 hours wrapping. Ugh, I forgot how much I despise wrapping presents. I know that so many people find joy in this seasonal chore, but to me, I just get annoyed over trying to find the tape in the mounds of paper scraps and such. I swear the tape disappears into a black hole while wrapping presents? Anyone else have this issue?

I actually was quite productive, mainly because I'm stubborn and wanted to finish them all. (Guess which one is yours family!)

While wrapping, I did catch the segment of Adam Lambert on The View. I must say, as weird and outspoken as this boy is, I have to admit, kid's got talent! Man, can he sing! Such a shame that all the good ones turn out so quirky.

My appetite finally made an appearance a few hours later for lunch.

I wasn't sure if I would be able to handle it based on how I had been feeling all morning, but I suddenly got pretty hungry and Pumpkin Kasha was what I had planned on having.

Pumpkin Kasha layered on spinach with cinnamon, roasted veggies (brussles and kaboocha) and TJ's Sweet Apple Chicken Sausage.

I know that I don't eat hardly any meat, but this is why I can't classify myself as a true vegetarian. I eat lots of seafood and Trader Joes Chicken Sausage. So odd, because I really don't like chicken and I HATE sausage and hotdogs, but for some reason, I have an odd obsession for these things.

I also topped the bowl with a little goat cheese and cranberry chutney to melt.


Drizzled in Amy's Honey Mustard and served with a bowl of grapes. It was a perfect lunch!

Awhile later, I needed a snack. Yeah for my metabolism working its way back to normal!

I put together the most tasty plate of sweets for a little dessert.

Naval Orange, Piece of Ginger Dark Chocolate and a Vegan Oatmeal Cranberry Orange Cookie.

Few things: The Ginger Chocolate is fabulous! I love the hints of crunch crystallized ginger and the chocolate was incredible creamy and smooth.

Okay, but the real showstopper here is the cookies!! OH MY GOODNESS are they ever AMAZING! I wasn't too sure, because I do prefer a soft oatmeal cookie and these were a bit dense, but after one bite, my eyes rolled back into my head. They are so light and fluffy and just fantastic. Who ever said Vegan Baked Goods can't be good should try these. I'm halfway tempted to go back to the Health Food Store and buy a ton of these to pass off as my "Christmas Cookie" contribution this year. But that would be wrong and I am the product of a Pastor's offspring, so I can not tell a lie! ;)

Well, time to get ready. Toly's parents will be here soon. We are going out to dinner and then to our church for the annual Christmas Cafe. It's a nice night of Christmas music, coffee, cookies and singing that our church holds every year. Should be a lovely little evening!

  1. that is some gourmet toast lady!! yum. props on getting gifts wrapped already! hah i havent even purchased mine.. ehh. glad you got some walking in and got to move a bit. ummmm eyes rooling back into the head cookies?! i have got to get some of those :) hope your thursday continues to go well <3

  10. I hope last night was fun - the Christmas Cafe sounds like such a cool thing!

    I love wrapping presents, but it can be frustrating when you have a lot to do at one time.
