Learning How To Deal

The week is just creeping along. For the amount of events and things that have occurred, I feel like it should be over by now, but surprisingly it's only half way there.

I've been pretty busy at work, trying to get projects and things finalized before I leave and also getting things organized for the new person that will take my place. Today, I actually had my first "real" event in my new position which was to attend a School District Business Chamber Commerce Luncheon. It was a great opportunity to introduce myself to some of the participating business and school district staff that I will be working with.

I've also begun my next round of long term antibiotics this morning. I am praying that this one will actually work with my body because as you know, I don't have much luck with taking medications.

So far, so good; however, I did discover that eating with this one is essential. It directs you to take them on an empty stomach and wait an hour to eat. Well, this morning, I took it when I woke up and as I was getting ready, I became extremely nauseous, dizzy and faint. I knew that I needed to get something in my stomach, and as soon as I started to eat, I immediately felt entirely better. So I guess now I know not to wait too long to put some food in my stomach when taking these.

I contemplated dry toast (seeing as that is about all I thought I could handle in that moment of time); however, I knew I needed nutrients in me so I went ahead and made what I had been planning and just hoped I would be able to eat some of it.

You've seen this one before and I now eat this at least once a week….

Diced warm pear with cinnamon, Kashi Autumn Harvest, Apple Sauce, Greek Yogurt, Honey Butter with a sprinkle of granola.

After the first bite, my stomach immediately felt better and I demolished this bowl. Ah, so much better!

Sheesh, between the antibiotics and the colitis and the mouth issues, my stomach has gone through quite some trying times this month. Thankfully, I haven't lost too much of an appetite throughout it all.

I know that tonight is Wednesday and BFD is supposed to be on the agenda; however, I regret to inform you that BFD was cancelled this week due to a shortage in ingredients. NO EGGS! Well you certainly can't have a BFD without eggs. No worries, there will always be next week.

I really just wanted something quick and easy tonight. I looked in the depths of my freezer and found a few TJ's Salmon Burgers and immediately remember how much I adore these things.

I grilled the burger and once it was done, added a smear of honey mustard. On the bun, one side was laughing cow, the other cranberry chutney with lots of spinach and avocado.

On the side, roasted kaboocha and green beans.

And this totally met my expectations. Quick, Easy, and Delicious!

So now I am unwinding with the beautiful warmth of the Christmas tree glistening in the background. I just love the feeling of having the tree up. It's so calming and always makes me feel so warm and cozy.

Before I go, I want to express my thanks to you all for being so incredible. Always, you guys offer the most amazing support and sincere compassion and I couldn't be any more grateful for everyone! :)

  1. Ugh- I think they never account for the size of the person when they give you antibiotics! I am tiny too and often feel sick when I take a "normal" dose of medicine. Dinner looks awesome. I love putting cranberry on pretty much anything :) Feel better and enjoy your relaxing

  3. I agree ... this week has been so long! I'm sure I haven't even had as much going on as you have so I can't imagine how much slower it's creeping along for you. I blame it on the fact that it's the long week before a holiday!

  6. Oh girl! Meds are so rough. But taking antibiotics is a great excuse to increase the yogurt amount! :D I am definitely a sad A that there is no BFD this week, so I'm counting down the days until I get me some next week!

  7. oooh i would have demolished the bowl too! glad it made you feel better. i should try heating some pears up soon. yum! the chutney is a perfect addition to that meal! lovely. um yeah~the week is dragging for me too! love you!
